Or you could do a tapas dinner, meat free. Try a spread of Hummus
rolled grape leaves (stuffed with rice)
tortilla (Spanish omelet with potato's, peas, cheese, onions), stuffed peppers (stuff with rice and spices and raisins)
phyllo puffs (baked and stuffed with feta, sun dried tomatoes and olives)
olive tempanade
bruschetta (tomato, basil, olive oil, lemon juice, salt and pepper tossed w/ cheese)
and tabbouleh. mmm.

A huge portabello mushroom, marinated & grilled like a steak with a stuffed baked potato & brocolli. There are lots of choices!! Mac & Cheese, pasta salad, fried rice, stir-fried veggies, you name it.
