Right now we are hung up on New England blueberry/banana with lots of added grains.

Healthy Good Morning Muffin
1 1/2 cups whole wheat flour
1/2 cup oatmeal
1 teaspoon baking powder
2 teaspoons cinnamon
2 medium carrots, grated
1/2 cup raisins
1/2 cup walnuts, chopped
1/2 cup desiccated coconut (preferably unsweetened to keep it healthy)
1 medium apple, 1/2 grated & 1/2 chopped into small chunks
1/2 cup yoghurt
1 banana, mashed
1 teaspoon baking soda
3 eggs, beaten
1/2 cup butter, melted
3 teaspoons vanilla essence


1. Preheat oven to 180°C/350°F/Gas 4.
2. In a mixing bowl combine wholemeal flour, oatmeal, baking powder, cinnamon, grated carrots, raisins, chopped walnuts, coconut and the grated apple.
3. In a second bowl mix the yoghurt, banana and baking soda, once combined add the eggs, melted butter and vanilla essence.
4. Blend well and then stir into the flour mixture until the two are combined.
5. Don't overbeat.
6. Bake in muffin tins for approx 20 minutes.

This is fairly healthy, and a favorite with my in-laws. Since I need all the help I can get with them, I make these often! (haha!)
You can play with the spices, of course, depending on what you like. Hope you enjoy.

Spicy Orange/Carrot/Bran Muffins (makes 12)

1 cup whole wheat flour
1 cup natural bran
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/8 tsp ground nutmeg
1/4 tsp ground allspice
1 cup grated carrots
1/2 cup black currants
1 Tbsp grated orange peel
1 cup buttermilk
1/4 cup oil (I use Jarrow's Organic Coconut Oil. It does NOT taste like coconut. Has a very neutral flavor. If you buy the VIRGIN coconut oil, it has a coconut taste.)
1 egg
1 tsp vanilla extract
*optional...add 1/2 cup chopped nuts

1. Blend together in large bowl flour, bran, brown sugar, baking soda, salt, cinnamon, nutmeg, allspice, carrots, currants or raisins and orange peel. Stir in chopped nuts, if using.
2. In second bowl, beat buttermilk, oil, egg and vanilla.
3. Add liquid ingredients to dry ingredients and mix just until moistened.
4. Spoon into 12 greased or paper-lined muffin cups.
5. Bake at 375 F for 20 min. or until done.
Make sure to use an oven thermometer, because ovens often don't register correct temperatures.

I tried these yesterday - they were excellent.
All-bran-muffins recipe
1 cup wheat flour (white or whole wheat )
¼ cup wheat germ (or oatmeal or flour)
1/3 cup sugar (box calls for 1/2 cup if you like them VERY sweet)
1/2 tsp salt
1 Tbsp baking powder
2 cups All Bran with Extra Fibre cereal
1 1/4 cups milk
2 egg whites (or 1 egg)
1/2 cup mashed banana or ½ cup applesauce
2 TAB veg oil (optional)

1) Stir together dry ingredients (except cereal), set aside.
2) In large mixing bowl, combine cereal with milk. Let stand 5 minutes until cereal softens. Add egg and mashed banana or applesauce, mix well. Add flour mixture, stirring only til moistened. Spoon into 11 muffin cups sprayed with Pam, etc. (or make 12 , but I like them bigger)
3) Bake at 400 F for about 20 minutes or until golden brown.

Ideas: Add ½ cup chopped walnut
Add ¾ cups blueberries.

BAKED APPLE MUFFINS

1 1/2 c. flour
1 3/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 c. sugar
1 egg, beaten
1/3 c. oil
1/4 c. milk
1/2 c. apple, grated or 3/4 c. applesauce

TOPPING:

1/4 c. butter, melted
2/3 c. sugar
2 tsp. cinnamon

Preheat oven to 350 degrees. Grease a 12-cup muffin pan. Sift together flour, baking powder, salt, nutmeg and sugar. Add egg, oil, and milk. Mix well. Add apple. Bake 20-25 minutes. Remove from pan while hot. Dip in melted butter and roll in cinnamon-sugar mixture.

My favorite muffins are usually either strawberry or apple cinnamon. I love to go to my favorite coffee shop in the mornings and enjoy a muffin with specialty coffee. Yum!!! Have a Blessed day! :)

Yeah raisin bran muffins, or Bran muffins with CRAN Raisins
I also enjoy pumpkin or zucchini bread made into muffins.

Omg applesauce muffins u can find the recipe on google there so simple and great!i still remember when i was in 6th grade we made them in life skills lolz.
