Most Sheriff's Departments are charged with civil service as part of their function. In my state the Sheriff's Departments all have a criminal division and a civil division (many officers serve both functions). The criminal side of it does your general law enforcement functions (patrol, investigations etc) and the civil side of it does all of the civil paper service.
Some civil papers that are served are writ of possessions, divorce papers, child services papers, eviction notices, and a bunch of various papers related to civil lawsuits.
Some criminal type papers that are served are protection orders, criminal summonses, trespass notices, and "5 day notices" (which are related to bad check and theft of services cases).
Oh yes I forgot about subpeonas, those can be for both civil or criminal trials.

The person writing the summons can choose the option of having a sheriff serve the papers to the defendant..

Divorce, restraining order or subpoena for court. There are probably others, but those are the three that come to mind.
