I have a Canon DSLR 350 and hate having to change the lens all the time for macro, tele-photo, etc. I know that there are sacrifices to be made but.... I want to hear from others what they use and why

The lens that stays on my camera while it is in the drawer "in waiting" is the 18-200 VR lens. It's not the absolute best lens in the world, but I can work with anything it puts out. This is my lens of choice, because it is so versatile. If I know what I will be shooting, I might switch to another purpose-suited lens, but this covers everything pretty well.

For Canon...

The Canon Zoom Wide Angle-Telephoto EF 24-105mm f/4L IS USM Autofocus Lens (2007-$1,060) is a pretty good all-around lens. This review says, "If I had only one lens, this would be the one."

The Canon EF-S 17-85mm f/4-5.6 IS USM (28-135 equiv.) (April 2007-$515) is a good "walk around" lens at a good price.

Excellent general purpose lens: Canon Zoom Wide Angle-Telephoto EF 24-70mm f/2.8L USM Autofocus Lens (April 2007-$1,140)

I really like my Nikon 17-55 and Canon makes a comparable lens, the Canon Zoom Super Wide Angle EF-S 17-55mm f/2.8 IS USM Autofocus Lens. It's not an "L" lens, but it seems popular.

If I had a DSLR, my one lens choice would cover the 28-150mm range. I had a Canon SLR and my main lens was the 28-105mm. I want a zoom lens that offers good sharpness and is fast. Something like a maximum aperature of 2.8 is ideal.

If your budget is small, I would go for the Canon EF 28-105mm f/3.5-4.5 II USM Zoom Lens. If your budget is large, then I would go for the Canon EF 24-70mm f/2.8L USM Wide Angle Zoom.

If I can only have one lens then it will be the Nikon 18-200 mm vr. But if you are serious in photography you know that it is not realistic and practical and even though this lens is very versatile you will want and need at least another one. So plan to buy another body for your lens. Not only it dramatically reduces the need to swap lenses, it also reduces the number of times you expose your sensor to dust everytime you are changing lenses.

I personally use the 24-105mm f/4 L but its expensive so keep that in mind. Its lightwieght, and its pretty damn sharp. Well I guess I paided for it so yea.But if $1200 is out of your range, then consider the 28-135mm f/3.5-5.6 IS. It is a good lens, not as fast as the 24-105mm on the telephoto end but good walk around lens.

For nikon, the 18-200mm VR because it just fits my wide, midrange, and telephoto...for me that is.
