I am looking for a way to make sour cream or something that will make a good substitute. They do not have sour cream here in Italy. Thanks

Try yogourt. It is often substituted for sour cream.

Plain yogurt works for some things.

You can actually get sour cream in Friuli Venezia Giulia if you're near there...

You can also make your own homemade sour cream from heavy cream and buttermilk. Plan ahead to give the sour cream 24 hours to thicken up and chill.

INGREDIENTS:
1 cup heavy cream
1/4 cup buttermilk (contains same culture as sour cream)

PREPARATION:
Mix heavy cream and sour cream or buttermilk in a screw-top jar, cover, and let stand at room temperature about 24 hours until very thick.

Chill homemade sour cream well before using and keep refrigerated.

Yield: 1 cup

Creme Fraiche, plain yogurt, and pureed cottage cheese all make fine substitutes for serving at the table. However if its for flavouring baked goods in a recipe, this will come closer to sour cream in flavour:

3 Tablespoons Butter blended into 1 cup (250ml) yogurt.

Can you get creme fraiche? That would probably be the best substitute.

If not, plain yogurt might work for baking. If you needed the sour cream to top something, you might try thinning mascarpone cheese with a little milk or cream.

Yogurt!
If you like it thicker, put it in cheesecloth and strain it.
It does take some getting used to, but it is better for you and some people swear by it.
It may not work in every recipe, but it's great on baked potatoes.
They do, however have both marscapone (like cream cheese) and ricotta (like cottage cheese) in Italy, and either of those might work for what you're making.

depending on your use, plain yogurt (not vanilla!) may work
