Remember that the story of Adam and Eve is an allegory, and is not to be taken literally. There is no real question that we evolved - all evidence says yes we did. So what if Adam and Eve represent the first of our species who were given souls?
UFO brings up an excellent point. The first of our species came out of Africa... they should not be painted Caucasian.

Adam & Eve were created by God, they were not birthed into life. He nor Eve had a belly button. But Cain and Abel did and all those birthed after them did too.
