I am thinking about making crepes for a class im taking this summer. I have to make something from france, and crepes sounded easy enough. But, are they easy to make and what could i fill them with or serve them with that would not be a lot of money and i could do easily. I can't fill them with eggs or ham or something fancy, but i want to fill them with something.

thanks i think i will bring some syrup....does anyone know if i could serve them not hot but not cold just room temp?

French Crepes

INGREDIENTS

1 cup all-purpose flour
1 teaspoon white sugar
1/4 teaspoon salt
3 eggs
2 cups milk
2 tablespoons butter, melted

DIRECTIONS

Sift together flour, sugar and salt; set aside. In a large bowl, beat eggs and milk together with an electric mixer. Beat in flour mixture until smooth; stir in melted butter.

Heat a lightly oiled griddle or frying pan over medium high heat.

Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Brown on both sides and serve hot.

Crepes are thin and delicate pancakes which can be filled with virtually anything

Easy Chicken Crepes

8 crepes, basic or Parmesan
1 can condensed cream of mushroom soup
2 cups diced cooked chicken
1 can water chestnuts, drained and sliced
1/4 cup dry white wine or chicken broth
dash Worcestershire sauce
dash of ground black or white pepper

PREPARATION:

In saucepan, combine soup, chicken, water chestnuts, wine, Worcestershire sauce, and pepper; heat through. Fill center of each crepe with a generous 1/3 cup of the chicken mixture. Fold two sides over chicken filling and bake at 325° for 10 to 15 minutes.

Turkey and Asparagus With Cream Sauce

1 tablespoon olive oil
1 tablespoon butter
8 ounces fresh sliced mushrooms
1 pound turkey cutlets, thinly sliced in 1 1/2-inch lengths
1 pound fresh asparagus, trimmed and cut in 1 1/2-inch lengths
Salt and pepper

Sauce
4 tablespoons butter
5 tablespoons flour
1 cup chicken broth
1/2 cup heavy cream
1 tablespoon dry sherry
1/2 teaspoon Cajun or Creole seasoning blend
1/2 cup fresh shredded Parmesan cheese
More chicken broth or milk, to thin, as desired
Shredded Parmesan cheese for topping
PREPARATION:
In a skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium low heat. Add the mushrooms and turkey cutlets; saute, stirring, until mushrooms are golden. Add asparagus and 1/2 cup chicken broth. Continue cooking, stirring, until asparagus is just tender. Add salt and pepper to taste.

Strawberry Cream Crepes

12 crepes, dessert or chocolate
2 cups fresh strawberries rinsed, hulled, and sliced
1/4 cup granulated sugar
8 ounces cream cheese, softened
1/4 cup confectioners' sugar

PREPARATION:

Reserve 1 cup of the strawberries. In a small bowl, combine remaining strawberries and 1/4 cup granulated sugar; refrigerate to chill thoroughly. In a medium bowl, beat cream cheese and powdered sugar until smooth and well blended.
Stir in reserved strawberries.
Spread about 1 tablespoon strawberry and cream cheese mixture over each crepe. Roll up. Serve topped with the chilled sweetened strawberries.
Serve strawberry crepes with whipped cream or whipped topping.

crepes really arnt hard to make. we used to make them IN class. the most popular way to serve is filled fruit (strawberries) maybe some whip cream. i personally just love mine smothered in butter & syrup.

almost any kind of pie filling makes a good crepe filling.

Giada DiLaurentis had a great recipe on her show last week for crepes. Go to www.foodtv.com and find the show "Everyday Italian". The show title is "Egglicious". She filled the crepes with mozarella and fontina cheeses, then covered them with marinara sauce and parm cheese, then baked them. Yum!

here are some crepe recipes. Crepes are fairly easy to make. It make take a few tries to perfect your first pancake though!
