This is a recipe I cut out of the paper years ago and still make often. Even though it doesn't have any actual chocolate in it, just cocoa, it tastes rich and delicious. Just make sure you use the best quality cocoa you can get hold of, like a Dutch-processed--it makes a difference!

Dark Chocolate Sorbet

--1 cup sugar
--2/3 cup fine-quality unsweetened cocoa powder
--1 teaspoon vanilla
--1 to 2 tablespoons Kahlua, Frangelico, or raspberry liqueur--optional

Blend the sugar and cocoa powder in a heavy saucepan. Slowly add 1 1/2 cups water, stirring constantly. Bring to a simmer over medium heat. Cook, stirring, until sugar dissolves (6 to 8 minutes). Bring to a boil. Cook, stirring constantly, until syrup turns thick and glossy, 1 to 2 minutes.

Cool to room temperature. Stir in the vanilla and the liqueur if you're using it.

Chill in the refrigerator (covered) for at least an hour. Pour into an ice cream maker and freeze according to the directions. Transfer to a container and let it harden up for at least an hour (in the freezer of course) before serving.

This is really good served with fresh raspberries, those crispy cookies shaped like cigars that you find at the store, or both. I hope you enjoy it.

Pina Colada Sorbet

INGREDIENTS

1 1/2 cups white sugar
1 1/2 cups water
1 (20 ounce) can canned crushed pineapple, drained
1 (13.5 ounce) can coconut milk
1/4 cup lime juice

DIRECTIONS

Make a syrup by bringing the sugar and water to a boil in a small saucepan over high heat, stir and boil until the liquid becomes clear, about 1 minute. Set aside to cool.

Blend the drained pineapple in a blender or food processor until very smooth and frothy. In a large bowl, whisk together the syrup, pineapple puree, coconut milk, and lime juice. Refrigerate until chilled, about 3 hours.

Freeze in the freezer canister of an ice cream maker according to the manufacturer's directions.

Pineapple Cream Cheese Fluff

• 1 8 oz package cream cheese, slightly softened
• 1 can crushed pineapple, do not drain
• 1 large package instant vanilla pudding
• 1 12 oz bin of CoolWhip

Place cream cheese in medium sized bowl and mush into chunks with fork. Mix in crushed pineapple - with the juice. Add the pudding and mix together and then fold in the CoolWhip. Pour into a serving bowl and refrigerate. May also add drained mandarin oranges.
