can't believe nobody knows what mince is, its mince meat. it's in things like shepards pie, sloppy joes, lasagna etc ...

take chicken thighs, sprinkle liberally with dried basil leaf and lawry's garlic salt, maybe a little lemon pepper too, bake on a shallow baking pan at 350 degrees for 30 minutes, then turn heat up to broil for 10 min to crisp the skin, serve with cornbread, green beans with bacon or ham in them, and mashed potatoes. if you use lemon pepper don't use the chicken juices in the pan, but if you dont, and just use the basil and garlic, the juices make killer gravy for the taters.

Try mild Sweet Potato curry with chicken- it's very healthy and easy to make and when I make it it all vanishes without any complaints. To make this you basically get yourself a mild curry paste and chop up the following nice and chunky

1 large sweet potato, 1 regular medium sized potato, a carrot, a few cauliflower florets. 2 skinless chicken breast fillets cut into chunks- you can also use leftover chicken. You can make it without chicken too, it tastes just as good without Also you can replace the chicken with a handful of red lentils which are very tasty and healthy

Pan fry the chicken without any curry paste on it. This will help maker sure the meat isnt too spicy which keeps the kids happy.

Now put all your chopped veg into a big pan raw and put in 1-2 desert spoons of mild curry paste and give it a good stir. Pataks balti paste is good. Open a can of chopped tomato and put that in with it's juice, top it up with a little bit of water and put it on a medium heat. After 15 minutes simmering add the chicken and more water if needed or you could put in so coconut milk if you like that. Leave it with the lid on on a low heat for around 25-30 minutes or until all of the vegetables have softened. You can put a few cardomom pods for an aromatic taste

You can serve this with rice of course, but it's also good on it's own with some naan or pitta bread. I even hide spinach in it and the kids just yum it up oblivious to the fact.

This is healthy and tasty:
Ingredients:

* 175 g Penne Pasta
* 1 Red Pepper, cut into chunks
* 1 large Onion, thickly sliced
* 1 clove garlic, finely chopped
* A handful of Cherry Tomatoes
* A handful of fresh Spinach leaves
* 2 tbsp Red Pesto
* 300 g Mushrooms, quartered
* 50 g Cheddar Cheese, grated
* 1 tbsp Olive oil
* Black Pepper

Method:

* Preheat the oven to 200 C/ gas mark 6.
* Mix pepper, onion and mushrooms in a roasting dish and drizzle with olive oil. Cook in the oven for 20 minutes.
* Add tomatoes to the vegetables and roast for another 10 minutes.
* Meanwhile cook penne until al dente and drain.
* Mix the penne with pesto, then tip the penne to the vegetable tray with spinach and mix well. Scatter with grated cheese and black pepper and cook in the oven for another 5 minutes.

Lasagne is really nice if you replace the mince with chicken. And I make a damn good lasagne. If you like the idea, ask me for the recipe. (Completely homemade, even the bechamel sauce.)

Apple and Onion Beef Pot Roast

INGREDIENTS

1 (3 pound) boneless beef sirloin tip roast, cut in half
1 cup water
1 teaspoon seasoned salt
1/2 teaspoon reduced sodium soy sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1 large tart apple, quartered
1 large onion, sliced
2 tablespoons cornstarch
2 tablespoons cold water
1/8 teaspoon browning sauce

DIRECTIONS

In a large nonstick skillet coated with nonstick cooking spray, brown roast on all sides. Transfer to a 5-qt. slow cooker. Add water to the skillet, stirring to loosen any browned bits; pour over roast. Sprinkle with seasoned salt, soy sauce, Worcestershire sauce and garlic powder. Top with apple and onion. Cover and cook on low for 5-6 hours or until the meat is tender.

Remove roast and onion; let stand for 15 minutes before slicing. Strain cooking liquid into a saucepan, discarding apple. Bring liquid to a boil; cook until reduced to 2 cups, about 15 minutes.

Combine cornstarch and cold water until smooth; stir in browning sauce. Stir into cooking liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over beef and onion.

Well... I'm not sure... What exactly is mince????

What where having is Cod, baked potatoes and salad..

Simply make your salad, throw your potatoes in the oven and your Cod on the grill..... You could even put your potatoes on the grill would say time and effort.

well, this meal is very nutritional, and really tasty. It's what i'm having for supper tonight! Ceasar salad, with salmon fillets done in lemon juice and spices of your choice...also, you can have pasta with this, and excellent and healthy meal for a family....i'm sure your family would love it if you were to serve a desserts too....maybe a pudding, ice cream or the best, sorbet! Best and easiest meal ( I'm presuming you dont want complicated recipes!) is three things from Aldi. 1) Jar of tomato sauce for Pasta. 2) Carton of meatballs found in chiller cabinet, 3) packet of spaghetti. Cook pasta, warm meatballs in sauce........... enjoy xx
