here are a few recipes:
Corn Pudding

4 cups cut corn (about 6 large ears)
4 eggs, beaten
1 tablespoon pimento, diced
2 tablespoons bell pepper, diced
1 cup milk
1 stick butter (8 tablespoons)
salt, pepper and paprika, to taste

Preheat oven to 350 degrees f.

Cut the corn off fresh cobs and scrape and catch the "milk" until you have 4 cups of corn and "milk." You may substitute canned cream-style corn or whole kernel corn, or a combination of the two. If you use only canned whole kernel corn, add 4 teaspoons milk to the recipe.

add beaten eggs, pimento and bell pepper. Pour in milk, add salt and pepper to taste and mix thoroughly.

Spread 1/3 of the corn pudding mixture in the bottom of a casserole dish. Dot with pats of butter. Repeat twice.

After the butter has been added on top of the third layer, sprinkle with paprika. Bake at 350 degrees until firm, about 30 minutes.
