The base:
14- to 16-ounce can diced or stewed tomatoes, undrained
2/3 large cucumber,peeled and cut into chunks
2/3 large green or red bell pepper, cut into chunks
2 bunches scallions, cut into several pieces
Handful of parsley sprigs
1 tablespoon chopped fresh dill or
1 teaspoon dried dill
To finish the soup:
3 cups tomato juice, or as needed
1/3 large cucumber, peeled and finely diced
1/3 large green or red bell pepper, finely diced
2 fresh plum tomatoes, finely diced
1 large carrot, peeled and finely diced
1 medium celery stalk, finely diced
Juice of 1/2 to 1 lemon, to taste
2 teaspoons chili powder, or to taste
Salt and freshly ground pepper to taste
Place all the ingredients for the soup base in a food processor or blender. Puree until fairly smooth. Transfer the puree to a serving container.

Stir in enough tomato juice to give the soup a slightly thick consistency. Add the remaining ingredients. Stir together, then cover and refrigerate for at least an hour before serving.

MIDDLE EASTERN CUCUMBER-YOGURT SOUP
Serves: 4 to 6

Here's an exceptionally easy no-cook soup from the Middle East. I enjoy it with barley added, as suggested in the variation below.
2 large cucumbers, peeled and seeded
1 pint (2 cups) plain low-fat yogurt or soy yogurt
1/4 cup finely chopped mixed fresh herbs (such as dill, parsley, and mint), or more to taste
1 1/2 cups low-fat milk, rice milk, or soymilk, or as needed
1 teaspoon natural granulated sugar
1/2 teaspoon ground cumin
Salt and freshly ground pepper to taste
Juice of 1/2 lemon, optional
Grate the cucumbers on a coarse grater, then place them in a colander. Place the colander over the container in which you will serve the soup. Salt the grated cucumbers lightly and let stand for 30 minutes (the juice from the cucumbers will drain into the container and the cucumbers themselves will become pleasantly crisp).

Place the cucumbers in the container with the cucumber juice. Stir in the yogurt, herbs, and enough milk to give a slightly thick consistency. Stir in the sugar and seasonings, then add the optional lemon juice if you'd like an extra tangy flavor. Serve at once or refrigerate until needed.

Variation: For a heartier version of this soup, add a cup or so of cold, cooked barley.


you can bring it in a thermal bottle and have a shrimp cocktail you can buy thos platters that are frozen by the time you get there its defrosted

Anyway, hopefully you can get some good ideas there.

Also, just my own thoughts, what about making up some fried chicken the night before and packing that cold w/ some salads (choose potato, coleslaw, green, corn, etc.), rolls, some beer and watermelon slices for a quick and relaxed meal.

Fried chicken is awesome on a picnic, but greasy. Buy some cold salads from the deli department (potato salad or pasta salad) to go with it. Pack plenty of fresh, juicy fruit for dessert.

I love picnics!!! Here are some of my favorite things to bring:

1. French bread, cheese, broiled chicken tenders, sliced tomatos, strawberries and brownies
2. Fried chicken, homemade red potato salad, fresh fruit, cupcakes
3. Tortilla rollups with turkey, ranch dressing, lettuce, tomatoes, cucumbers, chips, cookies
4. Rice A Roni salad with chicken, fresh pineapple
5. Hummus with pita chips, tandori chicken kabobs, tomato and mozarella salad, sugar cookies
6. Home made vegetable soup in a thermos, ciabatta bread sandwiches with barbecued pulled pork, carrots and celery with ranch dressing, sugar cookies and lemon bars

Basically, you can have a great picnic by sharing food with someone you really care about. Throw together leftovers, add a bottle of your favorite wine and find a lovely place to eat!

Buy a big bucket of freshly fried chicken. Make a fresh salad, and pack it in a bowl with a snap tight lid and pack a small bottle of salad dressing. Clean and cut up some fresh fruit, such as strawberries, bananas, blueberries, kiwi - mix all in a bowl. Then pack a little cooler with the salad and fruit bowls and bring your chicken and plates and utensils in your big basket. Don't forget wipes to clean up afterwards.

this is sorta different from a sandwhich.

Roast Beef Wrap

INGREDIENTS
2 tablespoons reduced-fat cream cheese
2 (10 inch) flour tortillas
1/4 red onion, sliced
2 spinach leaves, washed
4 ounces sliced roast beef

DIRECTIONS
For each wrap, spread a small amount of the cream cheese over the surface of a tortilla. Layer the onion, spinach, and roast beef on top. Fold opposite sides of the tortilla toward the center about 1 1/2 inches, and roll up from the bottom.

How about doing pasta - mixed with your favourite things - you could have tuna, chicken, turkey - put some corn in, tomatoes etc. Could take some potato salad, coleslaw as well as green salad
I always take some mini pork pies - cheese and crackers
Don't forget the drinks lol

I am a huge fan of packing finger food like cheese, strawberries, crackers, grapes, veggies w/dips and a nice bottle of wine.

How about a nice Pinic Salad.... You can bring a fruit salad and a green leafy salad. Dont forget your favorite dressings.
