What is the difference between chunk light, albacore and white albacore tuna? And what about tuna in water vs tuna in oil?

light vs white is the same as white vs dark meat (bit different taste/different fat content). Tuna packed in oil is going to have more calories from the oil. Read the labels on the cans and you can compare calories of white vs light and then either of those in their water or oil packing.

"White tuna is the same thing as albacore tuna. It has a milder flavor and whiter flesh than the tuna labeled "light," which can come from skipjack, yellowfin or bonito tuna. White tuna is usually more expensive and higher in calories and fat, but from another point of view, the extra cost could be worthwhile"

I like tuna and prefer white, in water.

Tuna in water is way lower in calories and fat than tuna in oil. I believe it's best to go for chunk light or white albacore, because like chicken it refers to what part/type of fish it came from, but I may be mistaken in that. I know the oil vs. water for fact though :)

The various types of tuna come from different fish.

The difference between tuna in water vs.tuna in oil should be obvious. One is packed in water, and the other is packed in oil. Open a can--you'll see.
