Make a tomato salad by slicing them in half, then quartering the halves, add sliced vidalia onions and dress them with 1/4 cup balsamic vinegar, 1/4 cup olive oil, 1 tsp salt and 1/2 tsp pepper. Or you could make a roasted tomato sauce by cutting them in half, drizzle with olive oil, season with salt and pepper. Roast in a 400 degree oven for 20 minutes, or they are browned, pour juice and all into a food processor and puree. Combine with cooked pasta. You can also just chop them up fresh and toss in a blender with garlic, salt, pepper, olive oil and a handful of fresh basil for a no cook pasta sauce, just pour over hot, cooked pasta.

Use them in casseroles with ground beef;in soups; make homemade spaghetti sauce; slice fresh and layer with sliced fresh mozzarella, basil and drizzle with olive oil, salt and pepper to taste; add to summer squash with onion and garlic and sprinkling of any cheese you like; Slice the top off whole tomatoes, scoop insides out, mix with cheese, minced green onion and bread crumbs and stuff back in, broil for 10 minutes. Make gazpacho, a cold tomato soup pureed with cucumber, onions, bell peppers. Reserve some of each diced vegetable to garnish. Dice some and toss with hot pasta, fresh parmesan cheese, a little olive oil, salt and pepper to taste.

Remove skins and seeds.

Add fresh sweet basil
