He doesn't. That was before Jesus came to show us that God wants us to sacrifice spiritually by giving our time and energy to Him and denying ourselves.
Before Jesus, when men wanted God's guidance or blessings they needed to get God to hear their prayers. They believed that giving God a valuable gift would make God love them enough to hear their prayer. They took one of their best animals. It had to be of the kind that tastes good to us (clean animal). It had to be perfect (no a reject or deformed animal). This valuable gift was then killed in a quick way (merciful) to spill out the blood. The animal's spirit presumably goes to God because it is "clean". Then the meat is "burned" to carry the gift to God in the smoke. (They can't eat it or this is barbecue, not a sacrifice). Sometimes part was given to the priests to eat if they are doing the sacrificing. The "clean" blood was given to the fire to give it to God.
It is symbolic to show God that you are really seriously trying to communicate with Him.
Today people don't do this. The Bible teaches that God desires us to make spiritual sacrifices by sharing our possessions with others, spending time praying, praising God and denying ourselves excessive pleasure. It fills the same purpose to give God what he wants to get him to hear our prayers and give us guidance and blessings. Jesus sacrificed everything for God, body and all. But he also did many small sacrifices during His life.
Sacrificing brings us closer to God to hear Him, because it is an act of reaching out to Him. It guarantees that our calling on His name is not just empty words - but serious. The bigger the sacrifice the more serious you are.
Jesus sacrificed everything in his life for God. He had no wife, no house, no money. He lived to spread the truth about God to the people. Naturally, when the Jews threatened to kill him if he continued he showed no fear of them. This led to his last sacrifice - his life.He did not fear men but continued spreading the word of truth until he couldn't do it anymore.

It is a matter of justice. God is a God of love – the very personification of it. Indeed, love is one of his four cardinal attributes. But another cardinal attribute is justice. All four of his cardinal attributes are perfectly balanced - none cancels out another.
Throughout the Hebrew Scriptures (Old Testament) we read of sacrifices that the ancient Israelites had to make for their sins. Leviticus 17:11 plainly states that the blood makes atonement. The apostle Paul, at Hebrews 9:22, enlightens us further on this. There, under divine inspiration, he says that unless blood is poured out, no forgiveness takes place.
Justice and complete atonement require that a perfect life cover what Adam lost for us. Adam lost the opportunity to live as a perfect human being. This is precisely what Jesus repurchased. The payment must match the debt exactly.

Danae___ above gives a great answer. I just wanted to add a thought. I know it's hard for people to understand how an all powerful God who proclaims that He is merciful and all loving would require ones life for sin. I think that's a perfectly legitimate question.
If you would, think about the expanse of this universe - the trillions of light years between planets and stars and galaxies. Imagine a God who has created it all and is yet much larger. Next imagine that this God is love (not loving but IS love.) To sin against something that vastly good and so awe-inspiring is devastating. Such an act against such good requires justice.
And God is also just - if He weren't He would no longer be good as justice is an action of good. Therefore, God, being that He is good and just, cannot allow sin to go without punishment. Unfortunately for us, the only justice for sin is death - that's not to mark how severe God is but to mark how severe SIN is. (To think so little of sin is to make your god too small.)
Thankfully, this God made a way - before Christ He allowed the death of an innocent animal instead of our own life. Then, with Himself as Christ, He gave up His own life - His own blood so that those who had done the unthinkable of sinning against such of a good God would not have to pay the price with their own lives.
So the question isn't why does God need a blood sacrifice but why do we think so little of God?

It is more of a "faith" thing. God asked for the best we have (so that we would trust God in faith, not just sacrifice). Blood was an offering from the best animal a person had, the most precious possetion to them materially.

for what purpose?
To lift from us the inherited sin punishment of having to die.
Adam lost it for us. Jesus got it back.
The price to again live without death has been paid, by Jesus.

This will occur when wickedness is done away with.
(Psalm 37:9) For evildoers themselves will be cut off, But those hoping in Jehovah are the ones that will possess the earth.
(Psalm 37:11) But the meek ones themselves will possess the earth, And they will indeed find their exquisite delight in the abundance of peace.
(Psalm 37:29) The righteous themselves will possess the earth, And they will reside forever upon it.
(Psalm 37:34) Hope in Jehovah and keep his way, And he will exalt you to take possession of the earth. When the wicked ones are cut off, you will see [it].

Wow, there are so many ways to try to answer this. The way the question is phrased, it makes me wonder which God you're referring to, and what your religious/spiritual background is. It makes it difficult to answer the question, but I'll give it a shot.
Assuming you're referring to some form of Christianity, and assuming you're referring to the crucifixion, here goes:
First off, God no longer requires blood sacrifice to forgive sins. Christ took all of our sins, past, present and future, upon himself on the cross, so, post-crucifixion, it is no longer needful for blood to be spilled. He did it all already. What is required now is simply to accept that His sacrifice was made for you.
Second, the reason He died was so that we wouldn't have to, at least not in the permanent, absence-from-God sense. "The wages of sin is death" -- meaning, sin separates us from God, which is a kind of death. When we sin, we drive a wedge between ourselves and Him, in exactly the same way that when kids misbehave, they drive a wedge between themselves and their parents. To be separated from our creator and the source of all love is to die, albeit slowly, and to die physically without having allowed Christ to remove your sin is to remain separated from Him permanently, which is Hell.
Because the wages of sin is death, someone had to die for sin, and because God is merciful and loves us all and does not want us to be separated from Him, He sent Christ to take on all of our sin and die for it so that we wouldn't have to. He recognized that we are not able to live sinless lives, and that we can't hope to atone for every wrong we've ever done. He made it a great deal simpler for us by bearing the burden Himself, which is the most loving thing imaginable.

He only needed blood sacrifice for 8,000 years.
Then he had his own Son tortured and murdered on the cross.
Now all you have to do is believe he really did it.
But on the good side, we no longer need to stone our neighbors to death for working on Sunday.
