it is a couple of different things.

first it is tradition.

second in humid areas or places where varieties of grapes are planted that are susceptible to diseases roses can often serve as early warning. grapes and roses grow exactly the same way and are affected by the sample diseases and problems. The rose is more deliate and often times will get the disease first.

When you go to wineries you get told several answers. One is that if there are diseases that will affect vines they show up in roses first, and that sounds quite plausible.

Another is that it dates from when they used horses to pull plows and they didn't want the stake at the end of the rows to be hit so the thorns on the rose deterred the horse.

But if you walk a few yards into the vineyard you'll see that only the rows that face the casual visitor have rose bushes at the end, the huge majority of the rest are without disease detectors and horse deterrers.

So the real answer today is because they look good.

I just got back from a wine country tour in Napa Valley, where they talked about this.
It is "supposedly" because diseases would turn up in the roses first, then they could address it before the grape vines get too sick.
However, during our tour, they did tell us this is not actually true. It's more for looks than anything.

I guess this has been done for centuries. There are a couple of reasons. Roses are sensitive to the same diseases as grapevines and if someone notices the rose plant is sick, the grapevine is promptly checked. Since it has been done for so long, many vineyards just keep up the tradition. It also looks nice as roses are classic and beautiful plants!
