Because back in the old days there was lousy medicine and no embalming process and people would literally be buried alive because they were simply in a coma. So before a loved one was buried you laid them out on a table to see if they would "wake". Now it's just a ceremonial viewing of the deceased as it's unlikely that someone is going to wake up after being stuffed with formaldehyde and sawdust.
