when you say "that experience really helped me grow" what are you saying?

It means that you gained knowledge and that knowledge helped you mature and see things differently, A.K.A growth.

It matures you're mind to a further state of understanding - growth can refer to the expansio of the brain most commonly known as LEARNING! When you say this internally it usually means

A- you're heart has grown outward and you now show sympethy empathy or understanding towards someone of something

B- You learn something new in you're brain that you never knew or you learn from you're mistakes

C- This helped you're brain and heart mature you are know at a full understanding or knowledge

We all learn from our mistakes at some point in our lives, the thing here is to not repeat 'em but to look back at it as a milestone you need to overcome on your journey to "grow" and be a better person.

grow in the aspect of dealing situations that had happened in the past with more ease..

grow ~ learning/getting used/getting expertise

Unless, you got taller or wider from the experience, it is one of those linguistic oddities that helps people to misunderstand each other rather than understand one another.

Flowery language makes for lonely people with no one who understands them.
