In college im going to major in political science and economics. Are there any great jobs that I can obtain with degrees in these? I hear all the time about how people study these things and just wind up being unemployed. So how would I go about making money with these and how do I work my way up all the way to a seat in Parliament?

Universities usually have a careers adviser, see them. However, as a general rule, a university degree in whatever field can make you very employable. You have picked up skills in research, data analysis, synthesising information, summarising and reporting. All these are important .

Get your foot in the door in any field you are interested, get experience and knowledge of firm/industry which cannot be gained from books. With experience work your way up.
In the industry you can build up contacts to help you in your career.
