For example, say you have a constantly heated piece of metal at say 400 deg F. If you pour water on it from time to time, won't it just evaporate, or will it potentially cause rust damage?

water boils and evaporates at 212 F. therefore pouring water on a piece of metal at 400F would just evaporate it. rust takes time to develop.

Hi. The water should just bounce off without interacting with the iron. (I assume you mean iron. Sodium would react differently.)
