Tomatos are easy to can because they are so acidic.

Another idea would be to buy a dehydrater and make your own sun dried tomatos. Sun dried tomatos keep well, can be frozen, and are good on all kinds of foods and salads, or can be used in soups this winter.

My last idea would be to set up a tomato stand on a Saturday. The grocery store tomatos are not as good as home grown and I think your tomatos would sell really well.

Check out this book at the library, or purchase it.
Blue Ribbon Preserves, by Linda J. Amendt.
This cook is full of great ideas for canning anything. Lots of good recipes for tomato's. I made Salsa Jam last summer, very different and very good. The author is a State Fair prize winner, and her book has over 300 recipes.

Tomato Juice is easy to make. Just cook the tomatos until they are soft and strain them through a cloth and strainer. Beats canned tomato juice., has lots of flavor

I make a tomato salad.
Quarter your tomato,
add onion, preferably red onions
add oil, vinegar, a pinch of sugar, salt and pepper to taste.
Parsley flakes to give color.
Mix well, but gentle.
Let marinate in refrig for at least 1 hour.

**When adding oil and vinegar, just a touch to coat the tomato's, you don't want them swimming in it. The tomato's will make their own juices.
Ingredients are done to taste.
Real yummy!
You can do this with cucumbers too.

You know what else you could do? Donate the excess tomatoes to a shelter. I used to put bags of tomatoes on my neighbors porches. They loved it.
