I would say seniors for in the 70-80's.
Elderly for over 80.
Never heard "Mature adults" before, but thinking that would be anything over 40.

Only call them Senior or Elderly if they are over 80. any one younger then that just call the older Adults.

In my work with them they usually don't concentrate on this type of thing. They just don't want to be forgotten.

All my sons refer to me fondly as "Old man" or "Old fart". Don't care what people call me, just don't call me late for beer or dinner.
