We cook out year round, and I'm in New England! In the summer we have pasta salad, potato salad, corn on the cob with seasoned butter, flavored steak and chicken.
A quick tip for steak or chicken....Your favorite Italian dressing is a quick flavor boost in a plastic bag over night with the chicken or steak. Also pinto beans either cooked and drained from the can or dried and cooked due to package and then a jar of salsa added and served with sour cream and cheese. This is a nice change from baked beans.
If you don't have time to make your own potato or pasta salads, buy them from the deli and add some Parmesan cheese, olives, roasted peppers etc, to make them taste homemade.
All of these are quick and easy to make. Everyone will love it because everything tastes better on the grill. Have fun and remember the bug spray and sunblock!

My wife and I cook out a lot, and we cook fish of some sort almost exclusively -- fish steaks, filets, shrimp, etc. Always ask when you buy it if you can grill it. For some fish, though, you need to buy a tray or something like it to put on top of the grill to keep it from falling apart. I got mine at Sears. Vegetables are good too.
Be sure if you cook fish, that you have done your homework, and do not buy fish that is endangered. Also, watch from where the salmon comes. Fresh caught, Pacific is the best.
If you have time to marinate the fish in a salad dressing, that adds good flavor to it.
We like to cook sliced egg plant and large onions too. Put some olive oil on the egg plant first.
Corn on the cob is great. First pull out the beard, soak it in a pot of cold water for awhile, and then put it on the grill, husks and all. Bring to to the table that way, and voila.
When it comes right down to it, there is not much you cannot cook on a grill. I watched my next door neighbor do a pizza the other night -- that's a bit much, but her kitchen is being re-done, and she tried it. Said it wasn't all that bad. Not for me though.
HTH.

We are actually cooking out again tonight! We have steaks, home made pasta salad, deviled eggs, garlic bread, regular salad, sometimes corn on the cob, and then some sort of dessert! Always way too much, but at least you can choose from a lot!

We've had a couple of cook outs so far. We made bratwursts and turkey burgers on one occasion. And on the other, we made chicken kabobs with chicken, red onion, mushrooms and squash. We also had rosemary new potatoes wrapped in foil on the grill. Oh, and grilled portabello mushrooms.
