For the very same reasons any of the other nations that have been locked in violent conflict do it.

In most languages the name used for people 'not of the group' implied strange / foreign and by default dangerous.

There are people that look to dominate others for the purpose of increasing their own turf and control (in religion as well as in more secular areas).

While it is fun to point fingers (in this case to the Middle East) let us not forget that Eastern and Central Europe hasn't been aggression free. For that matter neither has South and Central America. Also let us not forget that European nations along with the US also decided to invade Iraq.

Seems to me that this is a global issue.

We need, as a species, figure out how to play nice with each other so that everyone can benefit from the group.

People in the Middle East lack confidence in their country's law enforcement and justice systems. They feel driven to violence to solve their problems.

Minority rights do not receive enough recognition. This lack of respect fuels hatred and mistrust. The majority tries to impose their will on the minority and the minority finds ways to "get even".

This is a very difficult trend to reverse. Sometimes a culture needs a common enemy to unite. A paradox is that this can make it more difficult for an outside group trying to mediate or adjudicate problems.

It is also a mainly arid area where fresh water is hard to come by and food is hard to grow so competition for the limited fertile land has always been fierce.
With the discovery of oil, control of oil fields has become important because it has become their main source of income and also provides those who control the oil political power internationally.

Actually, the problems in Israel actually stem from the West's (particularly Britain's) insistence on dabbling in affairs in the areas. (British Mandate 1920-1947 for instance).
