boil lentils with a vegetable stock cube...throw in as much veg as you like and some nice ham and simmer for a couple of hours...easy, cheap and delicious!!!

Basic German Lentil soup. THE BEST!!!

2 x Med Onions, peeled & chopped
Clove Garlic, crushed 2 x Med Carrots,(scraped,chopped
2 x Stalks Celery,(cleaned,chopped)
8 cups Water
2 cups Lentils, washed & drained
Salt and Pepper
1 lb Frankfurters, sliced thickly ( you can use ham, and in some recipes they use both, But I just use Frankfurters)
4 medium sized Potatoes cubes

Saute onions, garlic, carrots, and celery in heated oil in a large pot for 5 minutes.
Add water, lentils, potatoes, salt, and pepper. Bring to a boil. Lower heat and cook slowly, covered, about 30 minutes, until lentils are just tender.
Add frankfurters and cook another 10 minutes. Serves roughly about 6 - 8 people.

Freezes well too :)

1 pound bag of lentils, rinsed
1 large can (46oz.) of vegetable or chicken stock
2 celery ribs sliced
3 carrots sliced
1 medium onion chopped
1 can of diced tomatoes
1/2 tsp of oregano
1/2 tsp. basil
1 ham hock or 1 cup of cubed ham optional

Simmer lentils and broth with vegetables until tender and soup thickens, add meat if desired. You could also add a drained can of green beans. Enjoy

Lentil soup easy and cheap. My family is italian and we make lentil soup as the following place cooking oil oin the pan with heat on low then add pieces of garlic stir until brown. wash lentils fill the pan up with water then add lentils.cook on low heat after one hour you can place ham or make it without ham or meats add onions and carrors and celery cook until tender.

Ingredients [edit]A bag of lentils
Half a head of garlic
2 Tablespoons of salt
5 Bay leaves
Half a cup of olive oil
A third of a cup of vinegar
Feta (optional)
Bread (optional but highly recommended)
Steps [edit]Pour the lentils out of the bag onto a clean, flat, white surface and pick out any little rocks that might be mixed in.
Fill up a large pot of water almost all the way.
Clean 4-5 pieces of garlic and put them into the pot.
Put 4-5 bay leaves into the pot.
Light the stove, place the pot onto it and leave it on high heat.
Pour the lentils into the pot and leave the pot slightly uncovered, by using a stirring ladle to prop up the cover.
Allow the water to come to a boil and from there, leave the lentils in for anywhere from 15 to 45 minutes, depending on the type of lentil.
Check the lentils periodically for hardness. When they are soft but not yet coming apart, they are ready.
10 to 15 minutes before you take the pot off of the stove, pour in about 100mL of vinegar, 200mL of olive oil and a teaspoon or two of salt. Stir all of these into the soup and allow to boil for the remainder of the time.
When you have determined that your lentils are ready, turn off the stove and allow the soup to cool in its pot for a while.



Tips [edit]Some lentils require pre-soaking in water for several hours. These are the harder variety, usually found everywhere except in America.
American lentils are usually softer and do not require presoaking.
If you presoak your lentils, be aware that they will require significantly less cooking time.
If you are in a hurry to eat your lentil soup, put some into a wide, flat, deep plate and they will cool faster than in a bowl.
Make sure to put the olive oil, vinegar and salt in early enough to allow them to fully mix in the soup.
Eat any kind of bread (except sliced bread) or rusks with your lentils.
You can even add slices of feta cheese (not crumbled) for some extra flavor.
A full pot will make anywhere between 6 to 12 servings.
Lentils are high in iron which is necessary for healthy blood.
Sliced carrots, onions, and celery add a terrific flavor to lentil soup. Cooked scrambled ground beef is tasty in lentil soup also.
A cup or two of uncooked pasta (such as small shells or ditalini) is all you need to turn your traditional lentil soup into Sicilian lentil soup. (Be sure to add an equal amount of water, and bring to a boil before adding the pasta. Stir frequently while the pasta cooks.)



Warnings [edit]Do not forget the lentil soup on the stove unattended. Lentils, just like anything else, burn when cooked too long.
Make sure to leave the cover partially off as the soup will foam up and could put the flame out, filling the room with dangerous flammable gas.

laney has a great recipe. making me hungry. soak the lentils for eight hours in cold water before cooking. Lentil soup is high in protein and iron. I personally like ham.

8oz Orange lentils
1 large onion chopped
few cloves garlic
2 carrots chopped or grated
1tin tomatoes
thyme
2 pints vegetable stock or chicken stock or marmite.

Sweat the onion, carrot and garlic in oil for few mins. Add the lentils, tomatoes, thyme and stock. Simmer for 30 mins then liquidise and serve.
If you want to spice it up add some curry powder when you've sweated the veg.

i make a very quick one and its great. Cut up some bacon into small pieces and fry.open 2 tins of carrots and put into pot,mash down with potato masher(put the carrot water in aswell)add boiling water and 2 or 3 ham stock cubes some chopped parsley-fresh or dried add lentils and bring to boil and then simmer for approx 20 mns,season to taste.you can add some small chunks of potato at the begining if you want to make it more filling.

Lentil Soup

Ingredients:
1 lb dried lentils
8 cups cold water
1 (16 ounce) can tomatoes, chopped
4-5 slices bacon, cut up
1 medium onion, chopped
2 medium carrots, chopped
3 teaspoons parsley
2 teaspoons wine vinegar
1 garlic clove, minced
2 teaspoons salt
1 teaspoon dried oregano
1/4 teaspoon pepper
1 large bay leaf

Method:
Combine all ingredients in a Dutch oven. Cover and simmer for 45 minutes.

You need some carrots, onions, lentils, water, and a stock cube vegatable or chicken it's up to you and some black pepper. Bring to the boil simmer untill carrots are soft liquidise or leave it chunky quick tasty and cheap.

1 ham stock cube
red lentils

diced potato
sliced leek
water

bring all ingredients together and bring to the boil, simmer until everything is cooked. i then blend them with a hand blender, it comes out just like Heinz tinned stuff
