Try this!! use tomato ketchup, some HP sauce and a little worcester sauce, chopped garlic and brown sugar. marinate the chicken. wings are the best!!, in the oven about 150-170c about 20-25 mins or until the sugar crystallises, and Bob's your uncle, finger lickin good. I have done this at my work place, believe me, it's that good!! enjoy!!

I know you said fresh ingredients - but this works everytime - Chesapeake Bay seasoning from Penzeys - and I'm from New Zealand. Great when the Chicken is warm bbq/grilling or George Foreman type grill, and lovely if you're using the cold spiced chicken in a salad. You could use Old Bay as well.

If you like spicy, coat the chicken in a dry rub of cayenne, paprika, hot salt, and ground cumin. Cook thoroughly on grill, transfer to hot pan, and pour a shot or two of cheap bourbon in pan. Light away from stove (best technique to prevent burning yourself is to hold the pan away from you, put a lighter up to the edge of the pan, then tilt until bourbon ignites). Let bourbon burn off - watch out, this recipe will make you sweat

One of the great things about chicken, is you could season it with most anything you like. There's really nothing that doesn't go well with it
SEASONED BAKED CHICKEN
1 whole chicken, cut up
3 tbsp. flour
Seasoned salt
Garlic powder
1 chopped onion
1/2 c. chopped bell pepper and celery
1/2 stick butter
1 c. water
Black pepper as desired
Season chicken with the above seasoning, shake in bag with flour, coat chicken. Before adding chicken, cover the bottom of baking pan with water. Put in baking pan; chicken, add garlic if desired, chopped bell pepper and celery, onion and dot with butter. Cover and let bake for about 45 minutes. Uncover, turn over, brown and serve over rice.
TACO SEASONED CHICKEN BREASTS
6 boned, skinless chicken breasts (halved)
1 sm. can whole green chilies
6 tbsp. (generous) grated sharp Cheddar cheese
1 pkg. taco seasoning
Crushed Cheddar cheese crackers (approx. 1/2 box)
butter
Pound breasts as thin as possible without tearing. Cut chilies into strips and lay 3 or 4 strips on one side of chicken breast. Add 1 tablespoon cheese per breast on top of chilies. Mix cracker crumbs and taco seasoning. Melt butter. Roll up chicken breast and secure with skewers or large toothpicks. Roll each breast in butter, then into crumbs, being sure to cover well. Place seam down in baking pan. Add and small amount of chicken broth or water to pan, to prevent sticking. Bake uncovered at 350 degrees for 40 to 45 minutes.

My favourite is .... Marinated chicken in Lime, chilli and corriander.
If you are using breasts, then lightly score it. In a bowl mix some olive oil, salt and pepper lime juice, chopped chilli, and freshly chopped corriander. Not a lot of lime juice as this can be over powering. Then I like to griddle it, but it can be fryed. Though it shouldnt need any extra oil.
Then in a blender, whizz a little lime juice, corriander and chilli and spoon on afterwards. Eat with salad. mmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

Bay leaves, basil, garlic, and cumin (tho I don't know where to get that fresh in my part of the world!) are my favorites. Lime juice right before eating! I also used savory once, and it was fabulous! And olive oil. Gotta use olive oil!
