It's called hops. Depending on when they're added to the boil (of the brewing process) they contribute bitterness, flavor, aroma and even a little preservative qualities to the beer. They are sometimes added to the beer after fermentation to give the beer an extra shot of hop qualities. This is called dry hopping.

Listen to the masses my friend 'cause there all right. Hops are a flower related to canibis (of witch there are several species) there only function is to make beer. There really not good for anything else.
Hops provide bitterness if added early in the boiling process and aroma if added during the last few minutes of the boil.
Some hops are better than others for either quality.

Hops, which give that tangy bitter zing to the flavor.
It looks like a cross between a pale green flower and a pine cone and it grows on vine.
The harvested hops is usually dried and compressed into pallets before packing.
