It means "I am"
"Soy de México." - "I'm from Mexico"
It comes from "ser" (to be). "Ser" is used for things that don't change. Your race isn't ever going to change, right? That's why you'd use 'ser'.
You also use it for physical description, your name, gender, dates, days, seasons, times, and what things are made of.
If you wanted to describe yourself as being 'sad' or something like that, you'd have to use 'estar' which also means 'to be.' You're not going to be sad forever, so you'd use 'estar'.
I'm sad - Estoy triste

soy = I am
por ejemplo:
Soy John = I am John.
However you can not say "Soy triste" (triste is sad) because soy is only used for things that are permanent like soy de los estados unidos (I'm from the united states). Hope this helps.
