It is an analogy to the literal heart so it can have many meanings depending on the topic. Most alanogies in the Bible have more that one meaning. The literal physical heart is the very life source of the human body, so the heart in analogy is always the central force behind the subject. So f the Bible says "As a man thinketh in his heart, so he is" is talking about the the very depth of your mind or thnking. If it says "If you believe with all your heart..." it is the deepest part of your faith. If "The heart of man is deceitful above all things and desperately wicked..." it is talking about the root nature of the natural man. Analogies are always interpreted in the light of the context.

The Bible uses this term in many places and man as of yet does not know the full action of all of our body members.
As regards the Heart for the sake of discussion we can use the word Figurative Heart. We know as we use our mind in our thinking, or when we talk to our selves. we are talking to that inner person. Some times our figurative hearts cause us to do things that our mind knows is wrong. This happens some times when we go shopping. In our mind we know we can afford a certain priced thing, but we come home with something that will keep us in debt for a year or two.
This is why the the bible says (Proverbs 4:23) . . .More than all else that is to be guarded, safeguard your heart, for out of it are the sources of life.. . .

I don't know how the heart -an organ of the body- ever got designated as the seat of emotion. The mind controls the emotions. I think it's a conspiracy -haha

This is a good question! My son (when he was about 3) had an echo cardiogram that looked at his heart. After watching a picture of it beating on the monitor he asked me "Mommy, where is Jesus?"
Anyhow..the heart means:
Your mind, your will and your emotions..othewise called your soul.

The heart is the seat of motivation...God reads the heart of a man..God knows what he is thinking and what he will do.
Scriptures also say he sees deep into the kidneys.
