i have tomarrow's breakfast planned out except for a side dish. I need something esay!!! veggie omlettes, muffins, and what for a sidedish???

Campbell's Hash Brown Potato Casserole


8 servings
1 hour 15 min prep

1 (11 ounce) can condensed cream of mushroom soup
8 ounces sour cream
1/2 cup melted butter
32 ounces frozen hash brown potatoes
1 medium onion, chopped
1/4 cup chopped bell peppers
8 ounces shredded cheddar cheese
ground black pepper
1/2 cup crushed corn flakes

Stir the soup, sour cream, butter, pototoes, onion, bell pepper, cheese and black pepper, to taste, in a 13x9x2 inch baking dish.
Sprinkle the corn flakes over the potato mixture.
Bake at 350 degrees for 45 minutes or until hot.

Skillet New Potatoes, Bell Peppers & Bacon

10 small red potatoes, unpeeled (about 1 1/2 inch in size)
6 slices bacon, diced
1/2 cup chopped red bell peppers
6 green onions, sliced (include some tender green tops)
1/4 teaspoon salt (or to taste)
fresh ground black pepper

Put potatoes in a saucepan over high heat; add water to cover.
Bring to a boil; decrease heat to med-low; cook until tender, about 20 minutes.
Drain and refrigerate until cold; then cut potatoes into quarters.
In a big skillet over med-high heat, cook bacon 6-7 minutes, until crisp.
Drain on paper-towel lined plate, leaving 2 tablespoons bacon drippings in skillet.
Decrease heat to medium; add in potatoes, bell pepper, green onion, salt, and pepper; cook 5-6 minutes, until vegetables are tender and potatoes are browned—stir occasionally.
Add in bacon; cook 1-2 minutes longer; serve immediately.

Bacon - Pork Fat rules!

Put slices on a sheet pan through into a 350 oven for 15 minutes.

Or the classic

Sausage Gravy:
5 cups water
7 cups milk
1 pound pork sausage
1 1/2 cups flour
2 tablespoons salt
2 tablespoons pepper

Mix water and milk in a stock pot and slowly heat. Do not boil. In a cast-iron skillet, cook the sausage. The meat should be chopped frequently while cooking to give it a ground beef consistency. When the sausage is well done, carefully strain and save the grease and then add the meat to the water and milk. Put the grease back in the skillet over moderate heat. Stir in the flour, salt and pepper to make your roux. Cook this mixture until it will cling to the spoon and come off the skillet cleanly. When the milk and water mixture is just under boiling, stir in the sausage roux while turning off the heat to thicken the gravy.

This is a huge recipe so just cut it down to what you need

BACON ROLL UPS

6 oz cream cheese with chives
1 tablespoon milk
25 mixed grain sandwich bread
25 bacon cut in halves

Combine milk and cheese. Stir to spreading consistency. Spread about 2 teaspoons on each side of bread, thin cut in 2 pieces. Roll bread and wrap with bacon. Place on broiler pan. bake at 350°F for 30 minutes or until bacon browns. These freeze well. Thaw before cooking. Yields 50.

I would opt for some fresh berries (with maybe some yogurt and granola). You could cut fresh watermelon, honey dew, grapes, strawberries and fresh pineapple and arrange them on a nice plate or platter. Or you could make some home-fries (diced potatoes with some bacon or do onion and pepper or add shredded cheese to them) There is endless possibilities to these.

Buy a frozen puff pastry. Add scrambled eggs, bacon pieces, sauteed peppers and onions, cheese, and ham to the center of puff pastry. Wrap up ingredients in the pastry. Bake for 20 minutes. Delicious.

How about a big bowl of mixed fruit? I love to toss cubes of watermelon & cantaloupe together with red and/or green grapes, some whole strawberries, and maybe some fresh pineapple. Any or all of these together are a wonderfully refreshing accompaniment to ANY meal.

Fresh fruit with yogurt would be delicious... Since it's summer, you've got great options with berries and melon, too.
