BISCUIT CRUST CHICKEN PIE

3-4 cups chicken broth
3 large potatoes, quartered
3 carrots, sliced
2 stalks celery. sliced
3 cups cooked chicken, cubed
1 3-4 lb chicken
1 sweet onion, chopped
1 tablespoon olive oil
3/4 stick sweet unsalted butter
1/3 cup flour
1/4 teaspoon thyme
1/4 teaspoon sage or bell seasoning
1/8 teaspoon nutmeg
1/4 cup minced fresh parsley leaves
5 cloves fresh garlic, chopped

BISCUIT DOUGH FOR THE CRUST:

1 1/3 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup buttermilk
1/2 teaspoon salt
5 tablespoon butter, sliced thin
1/3 cup sharp cheddar, grated
1 egg

In saucepan melt butter, add olive oil and chopped onion. Fry on high heat for 2-3 minutes. Add herbs, vegetables and garlic and fry 2 more minutes then remove from heat. Stir in flour and blend with fork. Return to heat and slowly add broth, mixing with wire whisk until smooth. Simmer on low heat until vegetables are nearly tender but not mushy.
For the crust, stir baking powder, soda and salt into flour and mix well. Cut cold butter (you can freeze it for best results) into flour mixture until only chunks the size of walnuts remain. Add cheese. (A nice addition is to add some chopped fresh rosemary to the crust but this is optional). Beat the egg with the buttermilk and stir into the dough. Gather the dough into a ball, place in the refrigerator in a plastic bag for 10-15 minutes to rest. This prevents gluten from developing.

It's important not to overwork the dough or you will cause it to become tough. Roll dough out on board to 1/2 inch thick. Cut out rounds of dough with a 2-3 inch biscuit cutter.

Put cooled chicken mixture in deep dish casserole. Place rounds of biscuit dough until chicken mixture is covered. Brush top with milk or cream.

Bake at 425 degrees F for approximately 20-25 minutes or until golden brown.

Optional: Use Pillsbury flaky biscuits (from a tube) as a substitute when in a hurry.

I've got a good one. I don't know what you call it but it is REALLY REALLY GOOD:

Diced Bell Pepper ( I used Red cuz it's sweet and pretty)
1 or 2 (I used one) onion diced
4 or five Garlic cloves or however much you prefer
one link/1 pound of sausage sliced ( I used half pecan smoked beef and half venison)
1 package of sliced mushrooms
Red or New Potatoes
Fresh Green Beans (Home grown is best of course!)
Seasonings of your choice ( I used sea salt, seasoned salt, and hamburger seasoning)
Little bit of chicken broth or water (chicken broth is better) Just a little though

In a medium or larged sized pot add Bell Pepper, onion, garlic, mushrooms, and sausage. I stirred in a little butter and the seasonings. Saute on med heat for a while till the veggies get soft and the mushrooms do there thing. Quarter the potatoes. Mix the green beans and Potatoes, a little butter and season. Mix it real well and let it sort of sit while the other stuff is sauteing. Add a little chicken broth or water then add the potatoes and green beans and cook on medium heat covered and stir occasionally. Of course it's ready when the potatoes are soft. MMMMMMMMMMMM so tasty and delicious. It's a comfort food but it's not heavy.

ps. When you use fresh green beans you are supposed to cut off the ends. I use scissors-it's just easier on my hands. Use a medium to large pot and keep covered while cooking.

This recipe is SUPER easy and SUPER delicious. I am a great cook and make this all the time for carry-ins and family dinners and it goes over fantastic, assuming you like corn.

Preheat oven to 400 degrees.

1 box Jiffy Mix (cornbread)
1 can creamed corn
1 stick butter (softened)
1 can whole kernel corn
8oz sour cream
2 T sugar (I use 1/4 cup but original calls for 2 T, suit to taste)

Mix everything together in bowl. Spray 13 x 9 inch pan with cooking spray and pour "batter" into pan. Cook until golden brown.

I use a gas stove and it takes about 35 - 40 minutes.

Another tip...do not double this recipe and put it into one pan...it never works. Just make two recipes and put in two seperate pans.

Chicken and Rice........
Brown 4 chicken breasts in a skillet with a little canola or other cooking oil. Remove and set aside(they are not fully cooked yet). Add a couple tablespoons of oil to the same skillet. Throw in some diced onions and 1 cup of Long-grained rice. Stir it in with the onions. Add any spices you like; a little oregano, cumin, some salt etc. Pour in 2 cups of canned chicken broth or water. Arrange Chicken on top of the rice and cover. Simmer for about 20 minutes. You can also do pork chops this same way. It really is easy.

Hi Wayne - this is one of my favourites and really easy - chilli con carne.
Heat some oil in a large saucepan over medium heat, and brown 400grams mince lightly. Add a teaspoon of hot chilli powder (you can add less or more next time, depending on how hot you found it) and stir for a few seconds.Then add a medium tin of tomatoes, a medium tin of kidney beans (drained), and a nice dollop of tomato puree. Bring to the boil, stirring, over high heat, then turn down heat to a simmer (sauce is just bubbling a little) for an hour or so. Put the lid on the pan, but check and stir from time to time - you may need to add a little water if it's looking dry. Serve with plain boiled rice or oven chips (or both!) plus any of the following you fancy : grated cheese, hamburger relish, salad, garlic bread. Good luck!

Well try the fast and easy way first. Use soups and sauces to help make up your dishes....maybe all in one dish...I cook that way often....

So here is one 3/4 cup of long cooking rice, 1 1/2 c water, 1 can of cream of chicken or cream of mushroom soup, and 2 cups of vegetables....can be canned or frozen or even fresh....mix all together in an 8 by 12 cassarole baking dish. Add salt, pepper, Top with breasts of chicken...four large, or 8 small....and bake at 375 for 45 minutes to an hour. Take out and cover with cheese and bake another few minutes to melt. This is delicious....serves four to six people....just made it last week!

You can change this by the seasonings....add italian seasonings, and use parmeson cheese instead....

Meatloaf.....mix together....ground beef, 2 T mustard, 2or 3 T catsup, 1/2 chopped onion, chopped celery (3/4 Cup), 2 eggs, 3or 4 slices of bread in small pieces, 1/2 c milk, (these amounts are approximate...adjust as you like....mix all together and put in a baking pan...leave a "channel" around the edge for juices while baking....Bake at 375 for 1 hour or until done. (You can add carrots or vegetables and potatoes around the loaf and bake them together...or make Baked Potatoes at the same time..)

Basics is key. Using already made stuff is best for a beginner. SO... spaghetti
Buy some spaghetti sauce. Any that sounds good.
Get one Pound of ground beef.
Buy spaghetti noodles.
Use directions on noodles to cook the noodles.
Put beef into a pan, with 2 table spoons Olive, or vegetable oil, and stir constantly until done. You should be sure to break up the beef into small enough pieces to eat with your spaghetti.
one beef is done, strain out extra oil from pan, put sauce in with beef. Cook as directed on the sauces directions, or until hot enough to eat.
Put "meat sauce" over cooked noodles (strained) and you have a great spaghetti!

Here's a really easy beginner recipe:
Penne and Vodka Sauce
Prep Time ≈ 10 Minutes
Cook Time ≈ 15 Minutes
Makes 4 servings.
1 (16 ounce) package penne pasta
2 tablespoons butter
1/4 pound thinly sliced pancetta / bacon, chopped
1/3-cup vodka
1/2-cup heavy whipping cream
1 1/2 cups tomato sauce
1/2 cup grated Parmesan cheese

Bring a large pot of lightly salted water to a boil.
Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Meanwhile, melt butter in a large skillet over medium heat. Add pancetta, and sauté until lightly browned.
Add vodka and stir until it is reduced by half, about 4 to 5 minutes.
Stir in tomato sauce and cream.
Simmer uncovered for 10 to 12 minutes.
Stir every few minutes.
Stir in pasta, and heat through.
Serve with Parmesan cheese.

Bring 4 quarts of water to a boil in a very large pot.
Crumble some ground meat (I recommend ground turkey meat) into a cold fry pan or skillet. Turn the heat on to medium, and stir it as it browns.
When the meat is browned, add one can or jar of Marinara or Spaghetti sauce.
Simmer (just under boiling) over low heat with a cover on.
When the water comes to a boil, add a tablespoon of salt, and stir in. When the water returns to a boil, place spaghetti pasta (I recommend 'vermicelli') in a handful at a time, stirring as you go. When the whole pound of pasta is in the pot, set the timer for 9 minutes.
Drain and return to the pot. Add a tablespoon olive oil and toss.
Serve with the spaghetti sauce spooned over the pasta on a large plate or pasta bowl.
Variation:
Add 1/4th cup of Chianti Classico or Red wine to the sauce before the simmer stage.
Pass shredded Parmesan cheese at the table.
Serve crusty Italian or French bread to sop up the sauce.

Hi Wayne - I've just given this one to another guy who is learning to cook. He thought it was great and easy.

Butter an oven-proof dish
Lay in it a tail piece of smoked fish for each person
Cover each fish piece with sliced tomatoes
Cover each with a rasher of bacon
Fill all the gaps around the pieces of fish with mushrooms
Put a piece of greaseproof paper lightly over the dish and bake it for about 20 minutes at 200C or Reg.7

Serve with hot rolls, crispy bread, rice or boiled new potatoes
(rice takes about 10 minutes to boil, then pour hot water through it in a sieve to get rid of the starch), potatoes take about 20 minutes, so will be ready at the same time as the fish

I am a horrible cook and this is the easiest recipe and is wonderful but you need a crock pot.

French Dip Sandwiches
1 tri tip roast
1 cup water
1 package dry onion soup mix (not cream based)

Place all three in crock pot, cook on low for 8 hours (do not open or mess with the crock pot during cooking time). Shread with a fork after 8 hours, eat on your favorite bread or hoagie roll.
