okay my tempeh has been in the fridge my fridge is pretty cold, but my tempeh is a couple days past experation. do you think its okay to eat or should I just throw it out. tempeh is fermented anyhow right?

Everything I read says to use it by it's expiration date:

Tempeh is usually sold in the refrigerated or frozen food case. Frozen tempeh keeps well for several months. Refrigerated tempeh should be used or frozen by its expiration date. As with other aged or fermented products, (like cheese) a little mold on the surface of tempeh is harmless.

When I opened the package of tempeh, I thought the color looked a bit grey (but tempeh is normally pretty grayish, isn't it?). And since I don't have that much experience with tempeh and it didn't smell and didn't taste bad, I didn't give it a second thought.

Packaged tempeh will keep well for up to 4 to 6 months if kept frozen. Once thawed, tempeh will keep about 10 days in the refrigerator. When in doubt, I say "throw it out". Better safe than sorry.

Don't quote me on this, but I think you should be okay as long as you cook it immediately. I once heard that the "sell-by" and "expiration" dates are more for stores to make sure the products are off their shelves by that date. It does not mean that like magic (!) the food will go bad on that day. There is usually window of a couple days worth of freshness after that.
If in doubt, smell it. If it smells okay, cook it as normal and take a taste and go from there.

till now moving in with my ideal and smart finance, i could have instructed you NO! LOL! yet she has shown me certainly that eggs are good way previous their expiration date in the event that they're refrigerated good. I hate to even admit this yet we've eaten eggs a 2 or 3 weeks after expiration and that they have been fairly good. She says that a standard rule of thumb is, in the event that they scent undesirable once you crack them open, throw them out yet while no foul scent is observed, they're secure.
