I would suggest that you put any little bits into the mix for some cornish pasties, they taste great with lamb
What I do with the nice lean bits is mix them in a bowl with some mayo and a teaspoon of mint, then fill some flatbreads with it. Add some salad and you have sandwich fit for a king.

Heat some oil in a frying pan. Add garlic, onions and tinned tomatoes. Thinly slice the lamb and add to the sauce. You can add some herbs if you like, I would use oregano, and add salt and pepper to taste. Cook for 10 minutes, make sure the lamb is cooked through. Serve with fried potato cubes.

In a skillet, heat 2 tablespoons of oil, add a chopped onion and stir until golden, add the chopped lamb (cut into small pieces, but not very small), and stir for 5 minutes. Add salt, pepper, and a pinch of cinnamon (optional). Add a handful of frozen peas and carrots and stir for 3 minutes. Now add a cup of rice (uncooked) and stir 1 more minute. Put 1.5 to 2 cups of water (depending on the type of rice you're using, read on package) and reduce heat, cook for 12-15 minutes more until done. Enjoy!

If it hasn't gone bad then cut it up in very small pieces.
On a skillet, add some onions and garlics, when it goes a little golden add the meat, green beans and corn. Stir fry with some teriyaki sauce in it. Add a side of mashed potato/tomato soup and you have a meal.

about 1 large onion
2 tablespoons oil
1/2 cup tomato sauce
1/2 cup water
1 tablespoon brown sugar
1 tablespoon vinegar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
dash ground cayenne pepper
2 cups cubed roast leftover lamb
PREPARATION:
Sauté onion in skillet over medium heat in oil until softened. Add tomato sauce, water, brown sugar, vinegar, salt, and black and cayenne peppers. Cook mixture over medium heat for 5 minutes. Add leftover lamb; cover and simmer for 15 to 20 minutes.
Serve barbecued lamb over hot cooked rice or mashed potatoes.

I usually make pasties - cut the left over (leg?) meat up into chunks and add chunks of the veg (carrots and roast snips) and some of the roast pots cut up too.
Add gravy (not too much) and mix gently - you want the pots to thicken the mix but not end up with mash!
Make a rich shortcrust pastry (or cheat and use ready-made) and use a side plate to make circles.
Dollop of the mix into the middle, brush the edge with egg and fold to seal with the seam at the top. (Try to exclude as much air as possible.) - you can crimp the edge with your fingers to make them pretty. and put a couple of steam holes with the end of a knife next to the seam at the top.
Glaze with egg and then bake til cooked.
Enjoy with Salad or bubble and squeak made with the rest of the leftover veges!

I can't believe that you usually throw it away ! Why not freeze it for another day ? I would mince it and make a shepherds pie ( like cottage pie bit made with lamb not beef ).

Stovies, old scottish dish. in a pan put sliced potatoes and onions, the leftover lamb and water to cover cook until potatoes and onions are ready. serve it with lashings of brown sauce. it is ready to eat if you can serve it in a soup bowl
