Because it is a chemical, and if it isn't ALL cleaned off, then your good food could touch it, you would eat it, and that wouldn't be good. Also, you smell and breath it in when using it, although the new stuff isn't nearly as offensive.
Also, some people say that leftover 'crud' from previous grilling makes for a 'seasoned' grill and makes for better flavor. Kinda like a cast iron skillet idea. Not me! I like my grill clean--really clean!

Maybe because some people don't get it rinsed off well when using it. I have a self cleaning oven & had a few baked on areas that really didn't warrant having to use the selfcleaning feature, on such a hot day, so I bought a can of Easy Off (blue can) that can be used on such ovens, (used in cold oven) as well as BBQ grills. If it wasn't safe to use, the manufacturer would say otherwise. Just follow the directions on the can.

Chemicals!
i'd rather use the grill brush immediately after taking food off of it. easy to clean while grill is still hot!

it's ahrd to get all the excess off. you can go to your local hardware store they have grill cleaners that are safer and easier to remove..

You have to get all of the cleaner off. My suggestion use the water hose or put it in the bathtub to rinse it.
