extra virgin olive oil comes from the first pressing of the olives, with very low acidity. It is the most flavorful and the most expensive, and is generally used only when you want to taste the flavor of the oil in what you're preparng.

Comparing olive oils is like comparing wines. Ordinary olive oil is just like an ordinary wine, just fine when cooking food, but Extra Virgin Oil is like a very good wine with a great taste, using extra virgin oil your food will taste much, much better. Extra virgin oil is just the BEST of olive oils.
