Great with steamed veggies and Jasmine Rice:
Honey-Orange Glazed Chicken
Ingredients:
4 Boneless, skinless, chicken breasts
1/4 cup Honey
1/3 cup Orange marmalade
Prep:
Place chicken in a 7 x 11 inch baking dish. Set aside. Combine honey and marmalade in a small bowl. Microwave uncovered for 1 minute or until glaze is melted and hot. Stir. Spread half of mixture over chicken. Cover and bake at 350 degrees for 45 minutes. Uncover and cook another 10 minutes with remaining glaze or until chicken is lightly browned.

Try spreading a little barbecue sauce over the chicken, then putting a few strips of uncooked bacon on top of each one (3 or 4 strips each gives a good covering), and then topping it off with more barbecue sauce. Put them in the oven for 30-45 minutes at 350 degrees, or until they're cooked through. You can't get much simpler than 3 ingredients! Good side items for this are cornbread and a green salad. I suggest getting some cookbooks with simple recipes in smaller portions. Most cookbooks are meant to serve a family, which mean you have to either figure out how to make less or have lots of leftovers. Two of my favorite cookbooks are "Help! My Apartment Has A Kitchen!" by Kevin and Nancy Mills and "Healthy Cooking For Two (Or Just You)" by Frances Price.

Lemon pepper chicken: melt margarine in a baking dish w/ oven set @ 350. Add chicken covered in lemon pepper seasoning. Turn after a half an hour sprinkle other side then cook another 30 minutes. If the margarine dries out add more to keep the chicken tender.
Or simple barbecue. add salt, pepper, a dash of vinegar and your favorite BBQ sauce. Cook 1 hr @ 350!

Put a little cooking oil in the bottom of a baking dish. Sprinkle garlic powder or crushed garlic on oil. Place chicken breast(s) on garlic. Sprinkle with a small amount of salt/pepper, as you like. Slice potatoes over top of chicken breasts. Season again (use your favorites). Add water to about 1/3 way up sides of dish. Bake @ 375 for about 45 min to 1 hour.
* If you want easy, instead of slicing potatoes you can just use one of the boxed mixes, like packaged scalloped potatoes. My favorite is Sour cream & Onion potatoes. If you do this, use the amount and type of liquids listed on the box and bake according to instructions on box.

Marinate in Italian dressing for 30 minutes. Preheat oven to 350. Remove from marinade and toss with Parmesan cheese (depending on # of breasts, 1 to 2 cups.) Place on foil lined baking sheet, sprayed with cooking spray. Bake 20-30 minutes until juices run clear.

Chicken Enchilada Skillet
1 tablespoon oil
1 lb boneless skinless chicken breasts, cut bite-sized
1 14.5oz. can fat-free chicken broth
1/4 cup ranch dressing
2 tablespoons flour
6 flour tortilla shells, cut into small pieces
1 cup shredded four cheese
1/2 cup salsa
Heat oil in large deep skillet on medium-high heat. Add chicken; cook 7 minutes or until cooked through, stirring occasionally.
Mix broth, dressing and flour until well blended; gradually add to chicken, stirring constantly. Bring to boil. Reduce heat to medium-low; simmer 3 minutes. Add tortillas; stir to combine.
Sprinkle with cheese; cover. Simmer 3 to 5 minutes or until cheese is melted. Top with salsa.

1) marinate it for an hour or so in any vinegar and oil salad dressing, and bake or grill it.
2) cook the chicken breasts however you want - fry, grill, or bake. Then put it on a bed of cooked rice, top it with some mild or medium salsa, sprinkle with shredded cheese, and bake 5 minutes until the cheese melts.

4 skinless/boneless breasts
4 slices of bacon
1/2 onion, sliced
1/4 c brown sugar
Cook breasts in frying pan w/ just a little oil, keep warm in oven
Fry bacon in pan - remove from pan, reserve 1 tsp of bacon grease. (I know I know, not heathly, you can skip the bacon grease if you like)
With the 1 tsp of bacon grease or other oil (olive?) add onions and brown sugar. Cook until onions are tender.
Top the chicken with the bacon and the onions/sugar mix
You can eat it plain or we like to put it on rolls with lettuce, tomato, and ranch dressing and eat as a chicken sandwich.

Marinade with garlic, ginger, lemon juice, teriyaki sauce, pepper and sauce for 30 minutes. And then grill away.
And honestly, it doesnt really matter what spices you use. Mix some spices you like. Marinade the chicken with that and some lemon juice/vinegar/yogurt. And then grill.

wash chicken and wipe dry with a paper towel. Mix bread crumbs, parmesan cheese, garlic powder, salt/pepper (or lemon pepper), basil, oregano & parsley. Put in plastic bag. Beat 1-2 eggs....dip chicken breasts in milk, beaten eggs and shake in bread crumb mixture....you can bake (drizzle with olive oil) on 400 until brown & crispy or fry (until browned on both sides)....enjoy
