It's just an analogy, it's telling you it's good, just like chicken.. I did a stupid little survey about 2 years ago on this :)

because chicken has a rather bland taste and picks up the flavors of herbs, spices, and whatever else it ids cooked with rather well.
A few of the things that I've eaten that were described as tasting like chicken:
monkey,
python,
frogs' legs,
rabbit,
porcupine,
iguana,
and a number of other things. Most weren't bad, but I'd rather not go through the bother of getting the exotic meat that tastes like chicken when chicken is so easy to get.

They rely on what they know to describe new things. Chicken is fairly common and much white meat tastes similar, so they just automatically think of chicken when they taste it.

Its the standard answer when you are asked what something tastes like that you dont normally eat, its always Chicken.

because chicken doesnt taste like much of anything, and most things taste like that.

Because all white meats do taste the same in comparison, but cow and venison don't taste the same...neither do bear or bison. bear is very greasy, I had some when I lived in Alaska. Also tried moose jerky, it was strange.
