If you've never had it, sea bass is a VERY oily tasting fish (def not my fav though some folks go nutz for it). I can't see it would take well to batter and frying, both from the texture of the fish and the oil content. I'll broil it with seasonings. If no one has any special recipes you might want to web search it. I'd gladly give you one if I had it, but as I mentioned, I don't enjoy that fish and I love fish. You'll either love it or hate it!

Here's a couple sites/recipes to check out and see if any sound good to you;

(I love the toppings they use....fresh and flavorful, and would cut the oilyness)

(very simple technique from fish folk)

Hope you find one you love!

All though you can batter or fry sea bass, I don't recommend it. Sea bass, especially Chilean Sea Bass is delicate in flavor and light in texture and can easily be overwhelmed with other flavors. I'd recommend a simple basting with butter and a squeeze of lemon, plus a little salt and pepper to taste and stop at that! This is great with rice pilaf and fresh green beans.

You could bake butternut squash and then puree (like you were making mashed potatoes). I add a little butter, sea salt and pepper and a tiny bit of sugar. It has a very creamy light texture. You can also buy it already cooked and pureed from the grocery store. There is an organic company that sells it in the freezer section with other vegetables. It's really good!

2 lbs sea bass, filets
lemon juice
flour
salt and pepper, to taste
1/2 cup cooking oil
For the Batter
1 cup flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup beer
Slice filets into 2-inch strips. Sprinkle them with lemon juice, then roll in flour (seasoned with salt and pepper).
Prepare batter by combining flour, salt and cayenne pepper, then gradually blending in the beer until all the ingredients are thoroughly mixed.
Heat oil in fish fryer or cast iron Dutch oven. Dip fillets in batter and fry until golden brown. Drain on paper towel to remove excess grease.
Serve with hot sauce or tarter sauce.
