I need a quick, easy and tasty meal to make with CHICKEN...... can anyone help? Please no casseroles

CHICKEN FETTUCCINE

1 stick butter
2 lbs boneless, skinless chicken breast
1 cup half and half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 T lemon juice

Melt butter in skillet and saute chicken which has been cut into 2 inch chunks. When chicken begins to take on color, add garlic and green onions.
Add remaining ingredients except lemon juice, cover and simmer over low heat until mixture thickens and chicken is tender.

Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired.

MY FAV::Chicken Ceasar Salad Wraps - and are easy to make!
Thaw, cut into bite size pieces a couple of chicken breasts. Cook on skillet until no longer pink - few mins - add little salt n pepper.
Buy the salad mix prewashed, or put a salad together with leftover veggies. Add in large bowl.
Add your favorite ranch (you could try another dressing).
If you'd like i crunch some croutons into the bowl for added crunch.
Then sprinkle in your fav shredded cheese.
Mix all ingredients and cooled down cooked chicken in bowl.
Heat up a few torillas, wrap em up and tada...
All you cook is the chicken :)

I love having my chicken with Italian Pasta Salad. Just cook 1 box of pasta (any shape), drain, rinse and cool. Mix in 1-8 oz bottle Italian dressing, and 1 packet of dry Italian dressing mix. Dice 1 small red onion and 1 tomato. Toss and enjoy!
Also add a veggie or fruit side for a more balanced meal.
I also like the traditional meat, potato, and salad meal.

Aunt Jenny Chicken - I love this recipe! My Aunt Jenny always makes it when we visit her in Florida. It's definitely a Southern Comfort Meal...

1 jar dried beef
6 boneless chicken breast halves
1 can (10.5 ounces) cream of mushroom soup, undiluted
4 ounces (1/2 cup ) sour cream
6 slices bacon


Line a 9x13 pan with a single layer of dried beef.
Wrap each chicken breast with bacon, then put them in the pan on top of the dried beef.
Mix sour cream with cream of mushroom soup and pour over the chicken breasts.
Cover pan with aluminum foil and bake at 250 degrees F for 2 hours or until chicken is cooked throughly.

Best served with pan juices and rice.

I just read "Lion Amon Men" last week, which is awesome by the way, and Dorothy unravels the mystery of the chicken in a way that made me laugh out loud in a room by myself. Basically, she explains once and for all why the chicken crossed the road. The Lion asks, "Then what happened?" "Well, Uncle Henry broke his neck, and Auntie Em cooked him into a stew, and I cried and cried. I love to buy rotisserie chickens and make chicken flautas. You use corn tortillas, fill them with the shredded chicken, and them roll them. If you stick the tortillas in the microwave for a couple of seconds they are easier to roll. You place them in a baking pan and bake on 375 until the tortillas are crispy. You can fry them in oil, they are tastier that way. Top with chopped lettuce, tomato, cheese and sour cream.

Do it santa-fe style this one's a big hit with my family! You can either grill the chicken first or just put it in a pan and bake it, but season it up mexican style with taco seasoning and cumin. Grill it up (or place it in a baking dish with salsa and bake for about 30 min or until it's done) then smother with cheese and put it in the oven until it's melted. Serve with mexican rice, refried or smashed black beans and some chips. Sour cream and Guacamole are great on this too.

Pasta Salad

1 package of tri-colored rotini pasta cooked according to the package directions then rinsed with cool water
1 cup of your favorite italian dressing
1/2 cup shredded parmesan
1 tomato diced
3 scallions sliced
1 small can of sliced olives
1 english cucumber chopped
1 jar artichoke hearts with the marinade
1 cup broccolli florets
Combine all ingredients and chill for at least an hour.

I make a stir-fry with a bag of frozen vegs that come with the sauce packet. Quick, easy and good.

Knorrs makes a creamy pesto mix. (find it with seasoning mixes at the supermarket) You just add chicken and olive oil and milk with your favorite pasta. It's super good and easy!
