my farther-in-law wants five cheese lasagna with cottage cheese in it and I can not find what or how to make it.

Hi !!!
Here you go...just substitute the Ricotta Cheese with the Cottage Cheese and you will have your "Five-Cheese Lasagna".

Olive Garden 5-Cheese Lasagna (Copycat Recipe)

Really good lasagna! If you love Olive Garden's 5-cheese lasagna then you'll love this one! We like it with 1/2 lb. ground beef and 1/2 lb. Italian sausage in it.

8-9 servings 2 hours 1 hour prep

CREAM SAUCE
1/4 cup butter
1/4 cup flour
2 cups milk

CHEESE FILLING
1/4 cup sun-dried tomatoes packed in oil, minced
1 tablespoon fresh garlic, minced
3 1/2 cups ricotta cheese
3 eggs
1 cup grated parmesan cheese
1/2 cup grated romano cheese
1/2 teaspoon salt
1 teaspoon black pepper

OTHER
4 cups mozzarella cheese, shredded
1 cup spinach lasagna noodles or regular lasagna noodles, if unavailable
marinara sauce, as desired
extra parmesan cheese, freshly grated

Melt butter with medium heat in heavy 1 quart saucepan.
Add flour and stir until well blended; cook until frothy.
Add milk, stirring constantly with wire whisk as mixture comes to a simmer.
Cook and stir until thickened (3-4 minutes).
Chill while mixing other ingredients.
Drain and mince tomatoes and garlic.
Place other cheese filling ingredients in 3-quart mixing bowl with tomatoes and garlic.
Add 1-1/2 cups of cooled cream sauce and mix until well blended.
Refrigerate, reserving 1/2-cup for later use.
Cook lasagna noodles according to package directions.
Cool under cold water and drain.
Place 3 lasagna noodles in a 9x13x2 lightly oiled baking dish, overlapping slightly.
Spread 1-1/2 cups cheese filling over noodles; sprinkle with one cup mozzarella and 1/4-cup fontina cheese.
Repeat pasta and cheese layering; top with remaining three lasagna noodles.
Spread 1/2-cup of reserved cream sauce over top and cover lightly with foil.
Preheat oven to 350 and bake for 1 hour.

Cheesy Garlic Bread

4 servings 20 min 5 min prep

1 loaf French bread, unsliced
1/2 cup butter
2 garlic cloves, halved
1 teaspoon dried parsley
1/3 cup grated parmesan cheese

Preheat oven to 375F degrees.
Cut slices down the length of bread loaf at 1 inch intervals, without cutting all the way through.
Rub slices and top of loaf with cut sides of garlic.
Mince garlic.
Combine butter, garlic, parsley and Parmesan.
Spread butter mixture between bread slices and on top of loaf.
Wrap bread in foil leaving top partially uncovered.
Bake until heated through, about 15 minutes.

I use cottage cheese, ricotta cheese, mozzerella cheese, sharp cheddar cheese, and parmeson cheese. Shred the cheddar and moz and mix in with all the others. Add a raw egg and blend well. You lasagna will taste better if you add your seasonings to the cheese, not the sauce. Then you just layer that with or without meat and a little sauce and the noodles, then on top, add a good amount of sauce to make sure the noodles are covered. Cook uncovered in 350 oven for 45 minutes to one hour. Let set out of oven 15-30 minutes to let the cheeses meld back together and eat! (1/2 cup cottage and ricotta, about 4 ounces of moz and cheddar and about 1/4 cup dry parmesan or 4 ounces fresh grated parmesan.)

Okay I personally think cottage cheese is yucky in lasagna...but if thats what he wants, thats what he shall have! If you can manage it, substitute the cottage cheese with ricotta!

Heres a good recipe, its mine.

1 lb ground round
1 onion, diced
(as much of each as you want, I would recommend 6 cups total) mozzerella, provolone, shredded parm, ricotta
1 jar spaghetti sauce
noodles, cooked, cooled and not rinsed
1 tablespoon each: italian seasoning, garlic powder, onion powder, dried parsley (I actually use more of this)
salt and pepper

Cook noodles, set aside.

Cook meat with onions and herbs, drain and cool. Mix with all the cheeses and sauce. Put some sauce in the bottom of a 9 X 13 pan, add a layer of noodles, layer of mix and keep going building until the last layer is a meat mixture layer. Cook for 45 mintes at 350. If you want, 10 minutes before you pull it out, add some extra shredded cheese to the top and bake until gooey.

Hey for sure you have been given a request..!
make ANY kind of lasagna sauce GO to the deli get ANY 4 kinds of cheese Cheddar, jack, mozzarella, ricotta, that's 4 there are still a hundred to experiment with AND don't forget the cottage.
You do know you can use tortillas instead of pasta
Just think corn instead of flour.
Now that will add texture and flavor.
