You should have asked a different question to believers - "Why do you believe in the first place?"
After all, there is a very strong correlation between the region of the world one grows up in, the religion of your parents, and the religion you believe in. If you grew up in Saudi Arabia to Muslim parents you would be just as *sure* about Islam as you are sure now about Christianity (or whatever you currently believe in).
Even ignoring the social/geographical element of religion, people give tremendously BAD answers for why they believe. Most of the time these reasons amount to warm fuzzy feelings, or a lucky break... hardly proof of an all-powerful deity who can manipulate the world. The world runs exactly as if there is no supernatural power influencing events (Sometimes cancer goes into remission, sometimes it kills someone extremely quickly, both to believers and non-believers alike). The burden is on the theist to show otherwise if they believe.
As for the second question, an all powerful God could *easily* come up with 1000s of ways to convince me. A man claiming to have healed Aunt Flo's back pain using God magic ain't gonna cut it for me.
Edit - I am an atheist, who like 99.9% of atheists I have ever seen discuss the issue, allow for the possibility of some kind of God. Unfortunately the religious think it is admirable that nothing would ever change their minds. They have totally abandoned reason.

It would take me being destroyed to change my views on if God/universe exists or not. And by destroyed I mean removed from life in a way that no one ever knew of me actualy existing. And even then thats not good enoth. Because I had already existed in one point in time so that means as long as there is something other then total void my existance in this universe would still be known by something or someone. So basicaly you cant do what you ask to change my faith in universe/God without breaking a ton of the laws of physics.
Of course sense most atheists dont believe in anything they obv do not understand that the laws of physics are infact real laws that can not be broken.

I am sure some of you will read this and roll your eyes thinking "another freak" but...
I, too, have heard and experienced his existence. From atheist to Christian. I liked the answer above "burn your hand"... GOOD ONE!
In regards to atheist changing their minds...John 3:19 says, "Men do not step into the light for fear that their deeds will be revealed". I’m sure many will disagree with this but it’s the truth... Atheists are not waiting for evidence. They are hiding themselves from it. I’m sorry if that offends someone but I speak from full conviction. When I was in that place I truly believed myself. Now I look back and realize that the entire time a part of me knew that their was a God, I just didn’t want to admit it, for pride or fear.... or because I wanted control.

A break in the laws of physics...A miracle of Biblical proportions...These are the things that would make me believe...
In fact, God should know exactly what it would take to convince me...
(edit) It's always interesting to see how many people proudly announce that their minds will never change no matter what. In no other area of life would this be acceptible, let alone commendable.

You can't make me give up my belief in God or Jesus.Not now ,I know He's alive and I have been forgiven.I walked to many years in the footsteps of the non-believer.Never again my friends.You could prove Evolution tomorrow but that doesn't mean there isn't God or Jesus.And I won't be signing on board that sinking ship ever again.

Proof that the billions of people all over the world and from all kinds of ethnic, social and occupational backgrouds personal "experience with God" was based on mental illness, and NOT an experience with the Holy Spirit... it'll NEVER happen.
