in the whole Italy we pronounce it "pess-to".
E in Italy is pronounced like your A, the final O (which isn't very common in english) is pronounced like the O of the word "Off".

i've find a video where an italian grandma show how to do pesto at home... she pronunce Pesto 2 times at 10th and 11th second of the video...
