Well. a XC does not need disc brakes, but they work so well they're a great addition, and most new frames only include tabs for discs. There are some pretty light ones, like Magura Marthas.
Also, a 80 mm full suspension is a XC setting, most all mountain begin at 100mm and can go up to 150mm, and freeride starts at 140mm.

You don't NEED disc brakes on an XC bike. In fact I think they are more trouble than they are worth.
Front suspension of 80mm is fine, I prefer 100mm especially for longer races.

If you are only concerned with Xc racing, you will need to base your decision on the terrain you ride. If you are going to race where it is muddy, water crossings, or long downhills go with disk brakes. 80mm front fork travel is the standard, a few have 100mm. If you are only concerned with a Xc bike for every day riding go for extra fork travel (100mm). Where I race Xc it is extremely rooty, I switched my bike to a 100mm (factory was 80mm) fork, It slowed the steering down slightly but it is a lot more forgiving and after a race you don't feel so beat up.
