A portion of a gospel or epistle would be appropriate, along with a depiction of a host and/or a chalice.

Instead of writing ( in Latin ,if you must?) how about a cross , with a communion wafer , & the wine chalice , on either side, at the base of the cross . I've seen that in many Catholic churches* , on the cloth draped across the alter, as a flag, and in stained glass windows .
*( while delivering flowers - I'm not a wedding/funeral junkie)
