I am going to continue on the same thread as the other answerers. ASK them, but ask them individually as persons. Personalize the request.
If you can do it on a face-to-face basis, it is perhaps best because most people find it difficult to turn people down on a face-to-face basis. Say to the person, "I need you to help by providing a bean casserole for the potluck dinner."
If it is difficult to do on a face-to-face basis, do it by telephone, but still make it personal. It helps if the people are active members of the group. That is to say, if a person is a member of the art association and has been for the past 20 years but has always been inactive, don't ask they. However, if somebody is active in attending events and you know that they are, ASK THEM.
In an organization, it seems that most of the activity involves a small number of people who carry the ball for the organization. It is best to ask them first.
Other than asking the regulars, you could "cold call" other members of the group. However, be prepared for a high rate of rejection for your request. Don't let rejection slow you down. You are playing by the "averages." It is like playing baseball, the more times you are "at bat", the more chances you have to "hit a home run."

I hate potluck parties. Some individuals are dirty and live in apartments that are roach infested etc.....Not to mention those that use the toilet and do not wash their hands. Disgusting!
Collect a set amount of money and order by the tray from a catering place. Simple enough and no need for antacids or the like. What if you get food poisoning?

whereever you are holding the pot luck post a sign that volunteers are needed. when all else fails call in a few favors from friends and then do something nice for them at a later date.
