My suggestion...dont eat anything with Shark fin. I love sharks and they really do the cruelest things to these poor creatures who really aren't as dangerous as people make them out to be. When cutting the shark fin from the shark the shark has been newly caught and is still breathing. After the fin is removed they throw the shark back overboard so it can float to the bottom of the ocean and die from a)suffication since the shark cant move, it cant breathe depending on the species. b)loss of blood, still pretty slow and painful. or c)starvation-which happens a lot and its just really cruel.

I think broiled or grilled is best. Shark can be treated the same as swordfish. In fact some less ethical places used to substitute shark for swordfish.
I have also made sweet and sour fish with it, excellent.
Don't overcook no matter how you fix it. It can get tough.

Sharks are unsustainable. Many of them are endangered. Plus, they are also high in mercury. Don't eat them.
