Artichoke Dip


2 cans Artichoke Hearts in water
2 pkg. Cream Cheese
2 pkg. Parmesan Cheese
2 c. Mayonnaise
1 can Diced Green Chilies


Mix together. Put in 13x9 pan bake at 350° till bubbly.
Serve with bread or crackers

Artichoke Fritters Recipe

INGREDIENTS:

* 4 medium artichokes
* 1 tablespoon lemon juice
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 cup water
* 2 large egg whites
* 1/2 cup club soda
* Vegetable oil for deep frying
* 4 lemon wedges

PREPARATION:
Wash and trim the artichokes and drop into a large pot of boiling, salted water. Add the lemon juice and cook, uncovered, at a gentle bubble for 30 to 40 minutes or until the stem ends are tender when pierced.
Lift out with a slotted spoon and drain on absorbent paper.

Cut the artichokes into quarters lengthwise and remove the fuzzy chokes with a metal spoon. Cut each quarter in two, again lengthwise. In a large bowl, combine the flour, baking powder, and salt. Whisk to blend thoroughly. Beat the water and egg whites in another bowl until frothy, then add to the dry ingredients. Add the club soda and stir to blend. Dip the pieces of artichoke into the batter and fry, a few at a time, in deep fat heated to 375 degrees F. Drain on absorbent paper and serve immediately with wedges of lemon.

Yield: 4 to 6 servings

ARTICHOKE DIP

2/3 cup Parmesan cheese
1 14 oz. can artichoke hearts
2/3 cup mayonnaise
1/3 cup heavy whipping cream
1 tablespoon pimiento peppers, chopped
2 tablespoons green onion, thinly sliced
1 clove garlic, pressed
1/8 teaspoon red pepper flakes
1 tablespoon olive oil
1 tablespoon lemon juice, freshly squeezed

Preheat oven to 325 degrees F.
Grease a medium sized casserole dish or spray with olive oil spray.

Combine cheese, mayonnaise and whipping cream. Put garlic clove through a garlic process and stir in.

Drain and chop artichokes and stir in along with the pimientos, onions, red pepper flakes, olive oil and lemon juice.

Bake 25 minutes or until golden

POTATO ARTICHOKE CREAM CHEESE SOUP

2 tablespoons extra-virgin olive oil
2 small yellow/white onions-chopped (you could use leeks too)
1 clove garlic, minced
2 medium potatos, peeled and chopped
1 (8-ounce) package frozen artichoke hearts, thawed or 1 can artichokes (in water) drained
4 cups chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 block softened cream cheese (regular or reduced fat)
2 tablespoons chopped chives or scallions, for garnish

Heat olive oil in a heavy, large pot over medium heat. Add the onions and the garlic; stir. Add the potatoes and cook for 5 minutes, stirring often. Add the artichokes, stock, cream cheese, and salt and pepper.
Cook until the vegetables are tender, about 20 minutes. Using a handheld immersion blender, or in a blender in batches (only fill blender 1/2 way and make sure the lid is vented so it doesn't explode all over the kitchen :), puree the soup.

Sprinkle with a little chopped chives or scallion and serve!

go on Rachael Rays tv show website. Search for a recipe for tuna casserole. I think it says "not tuna casserole", but I can't remember. It takes artichokes, and it's a simple recipe- only takes 10 or 15 minutes. It's very tasty.

They are great in artichoke dips -- I see you have some recipes here already.

Also, you can chop them and put them in salads or casseroles.
