I can think of a number of such battes and wars. Right off the top of my head, is the first of the Arab/Israeli wars of the 20th century. The year was 1948, And the day after Israeli was officially given charter as a country, she was attacked. The U.N. then placed an arms embargo on all combatants -- dooming Israel. Still, she managed to "Find" a number of Czech. built Me-109s and a B-17 or two.
For me personally, the battle of Uhm Hujul in Desert Storm. We'd just moved into our new position (we would move about every three nights to a new location and set up as though we'd been there all along), we were still digging our fighting holes when the bombers took a pause. When they paused, the Iraqis decided to move their tanks, not knowing we were there. They ran right over our new position and quite literally, all hell broke loose. I lost 11 men that night, but we managed to kill (I'm guessing) close to 1,000 of theirs. We were out numbered, and out gunned. The battle started around 9:15 that night and by 3 PM the following afternoon, we were doing a sweep of about 20 miles, looking for survivors. The plan had always been that the army would be our back up -- LAVs were never intended to go up against a tank) with their tanks. When they heard the feccal matter hit the fan, they dropped all of their trash and beat feet south leaving us to die. We found their disgarded equipment the next day when we moved to another new position. Patton would have rolled over in his grave over that one! The things you never hear about on the news...

Read the Old Testament of the Bible. You will find numerous battles in which the Israelites were outnumbered thousands to one. They usually won those battles, too, with the blessings of God of course.

Battle of Chanclosville, Civil War has always been my favorite.

Leonidas and his Spartans have been a blazing example that will never dim throughout human history of men giving their lives in the name of civilisation. (But don't forget the Thespians and Locrians who fought and died in their rearguard.)

But my vote is for the few men of the British regiments that held their positions on Garrison hill during the battle of Kohima, in India, in April, 1944. Their positions were overwhelmed continuously by waves of Japanese troops, the dead fell in piles on both sides of their hastily dug trenches, but by morning the handful of troops of the Royal West Kents, Royal Berkshires, and Durham Light Infantry had killed thousands of determined Japanese, and the to that point
unstoppable advance of the Japanese armies in Southeast Asia came to an end.

Mankind would do very well to have the offspring of Leonidas' 300 among us.

The Battle of the Bulge, The Germans counted on fueling their tanks with captured gas/diesel, but failed to do so and the attack to breakout failed. Patton's ability to move the armored division an unheard of distance in a short period of time to counter the Germans move greatly influenced the Germans to give it up and halt.
