Green beans, sweet petite peas, brocolli, perhaps with baby carrots for a splash of colour. You can steam them or stir fry them. Keep it simple.

Green veg such as Broccoli, cabbage etc should be steamed al dente. Perhaps with an accompanying sauce (mornay) if the tuna doesn't have any sauce. Gravy is a no no. A dry white wine will be excellent. Well chilled though.

This is my new favorite, and it's really easy.
Preheat the oven to 450. Take several stalks of kale and tear the leaves off. Coat the leaves with a bit of olive oil and oven roast for about ten minutes, making sure it doesn't burn. Although I do let mine get a little on the crispy side. Add a little salt (opt.) and serve.
My old favorite is also really easy.
Preheat the oven to 450. Take bunch of asparagus and cut off the tough ends of the stalks. Place is a baking pan. Drizzle with olive oil, a little kosher salt and your choice of walnuts, sliced almonds or pine nuts. Bake for about 20 mins. (Note: if you're using pine nuts, only put them in for the last 5-8 mins. or so because they burn pretty easily.

A salad with fire roasted red peppers and balsamic vinagarette, crusty bread and mango coulis on top of the grilled tuna ( mango cubed, lime zest, jalapeno minced, and some fresh cilantro)

Forget the potatoes and go with orzo pasta or rice. And for greens, have either brocoli or brussel sprouts.

try grilling or in a skillet...'asparagus' with minced /powdered onion and garlic and butter in the pan. I usually dint like cooked veggies but this is very flavor full.
melt the butter, add veggies, and seasonings. zucchini would be good like this too.

I would go with sauteed baby bok choy, especially if you're doing an Asian flavor on the tuna.
