Baby Spinach Omelete

2 eggs
1 cup torn baby spinach leaves
1 1/2 tablespoons grated Parmesan cheese
1/4 teaspoon onion powder
1/8 teaspoon ground nutmeg
salt and pepper to taste

In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.

In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.


Spanish Potato Omelet

1/2 cup olive oil
1/2 pound potatoes, thinly sliced
salt and pepper to taste
1 large onion, thinly sliced
4 eggs
salt and pepper to taste
2 tomatoes - peeled, seeded, and coarsely chopped
2 green onions, chopped

In a large frying pan or skillet, heat olive oil over medium-high heat. Sprinkle potatoes lightly with salt and pepper. Cook until golden brown and crisp.

Once the potatoes are golden, stir in the onions. Cook, stirring occasionally, until onions soften and begin to brown.
Meanwhile, beat eggs together with salt and pepper. Pour eggs into pan and stir gently to combine. Reduce heat to low and cook until eggs begin to brown on the bottom.

Loosen bottom of omelet with a spatula, invert a large plate over the pan, and carefully turn the omelet out onto it. Slide the omelet back into the pan with the uncooked side down. Cook until eggs are set. Garnish omelet with tomato and green onion and serve warm.

Ingredients:

1 1/2 teaspoons each of butter and peanut oil or vegetable oil
3 beaten eggs
1/4 cup cooked, crumbled bacon
1/2 cup blanched or steamed spinach (remove liquid before adding to omelet or cover and cook in microwave until wilted)
1-2 ounces of real Swiss cheese (1/4 - 1/2 cup)
Salt and pepper to taste
1-2 dollops of sour cream
Instructions:

Heat a 7-10 inch egg pan over moderate heat (the smaller the pan, the thicker the omelet)
While the pan is heating, beat the eggs in a mixing bowl with a wire whip until blended but not frothy
When the pan is hot enough to sizzle a drop of water, add the butter and oil
When the butter stops foaming, whip the eggs a couple of times and pour into the pan
Let the eggs sit until they begin to cook around the edges
Lift the edges of the eggs with a rubber spatula and tip the pan to allow the liquid to run underneath
Repeat this process until the top is thickening and very little liquid egg remains
Add the bacon, Swiss cheese and blanched spinach across the bottom of the omelet and add salt and pepper, if desired
Fold in half and slide onto plate
If serving two, cut in half before sliding onto plates
Garnish with a dollop of sour cream

Ham and Cheese Omelet Casserole

INGREDIENTS
8 eggs
1 cup milk
salt and pepper to taste
2 cups diced ham
1 cup shredded American cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Beat eggs in a large bowl, making sure that they are mixed very well and have a 'frothy' top. Add the milk, salt and pepper. Mix well. Stir in ham, then add cheese pieces and stir well. Pour mixture into a well greased 4 quart casserole dish and bake in the preheated oven for 50 to 60 minutes or until top is lightly browned.

My fave omelet to make is a Mexican omelet. I got the recipe idea from recipezaar.com, but I tweaked it to my tastes. I add in salsa, fresh chopped green onions, cheese, and parsley. I also add in salt and pepper to taste and it is so good! I hope you will try it. It is definitely different, but worth it! Yum! Have a Blessed day! :)

More than an Omelet


Ingredients
4 eggs
2 Tbsp. milk
1 cup sliced bell pepper
1/2 cup finely chopped onion
1 Tbsp. olive oil
2 Tbsp. Bacon Bacon™
1/2 cup shredded cheddar cheese
1/4 cup Corn, Black Bean Salsa
Sour cream
Finely chopped cilantro

Directions
Combine first 2 ingredients; set aside. Saute next 2 ingredients in olive oil over medium heat in a skillet; about 4 minutes. Add egg mixture; cook to set. Sprinkle with Bacon Bacon™ and cheese; fold in half. Place on a plate; top with Corn, Black Bean Salsa, sour cream and cilantro. Makes 1 serving.

You can make a good omelet by just cutting up some of your favorite vegetables and mixing it in with the eggs.

Ingredients:

2 slices of Swiss cheese
2 slices of American cheese
1 slice of cheddar cheese
3 to 4 slices of Serrano ham
Procedure:
Beat the three eggs in a bowl, add salt and pepper.
In a medium skillet coated with butter over medium heat cook the cabbage, onions, peppers and ham. Set aside. Put some more butter to the skillet, add the egg mixture. Allow to cook. Add the cheeses. Add vegetables and ham and diced tomatoes.

I don't think there is a limit on good omelets. Here's one I do for my wife on our anniversary. Lobster and asparagus.

3 eggs lightly beaten with
2 Tbl. spoons sour cream and
2tbl. spoons champagne.
These should all be at room temp.

Steam asparagus until tender.

Hollandaise sauce.

3 egg yolks well beaten
3 Tbl. butter
squeeze of lemon juice

Melt butter until bubbling slightly
Whisk egg yolk with one hand while SLOWLY pouring melted

Cook omelet until firm but moist. I hate overcooked eggs.
Fill with asparagus and fold, pour hollandaise over all. Serve with orange juice and champagne on a tray, in bed.

works well with shrimp too.

My personal favorite:

Pepperoni Pizza Omelet

In small skillet
lightly saute' chopped bell pepper in "spray" oil
chop and add sliced pepperoni
whip two eggs with a touch of heavy cream (I use a Magic Bullet)
pour over meat pepper mixture
cook, covered, on low heat until middle is almost set
add chopped fresh tomato and mozarella cheese
cook until egg is set and cheese is melted

Serve and enjoy
