Don't disturb your old lady - she needs her comfort for her old bones and a cozy place to sleep. I have some inexpensive cotton quilts I put on the furniture and my cats curl up on them. They are easy to wash. You don't have to cover the whole piece of furniture with them - just give her a comfy corner to rest.
You can pick them up and put away when you have guests you want to impress with your new furniture.

She is going to have trouble understanding why you are not letting her on the furniture after all these years. It wouldn't be fair to confuse her at this point. Just cover the furniture for now. You can try to have one chair that is just for her and try to gently teach her to go on that one only.

There are plastic mats that you can buy at any petstore that deter a cat from hopping up on the furniture. This mat has tiny little spikes on it, not sharp enough to injure the cat, but big enough to annoy them so much that they will decide to find another place to snooze.

You must have allowed her to develop this habit, now you want her to stop, good luck.
You could try getting her her own little bed, put some catnip in the bed and see what happens. I can tell you know, she's going to prefer the couch anyway.

Then you shouldnt have started it in the first place. Try investing in a cat condo, or something else raised from the ground that its ok for her to sleep on, my cats hate laying on the floor. Maybe a window perch?

Tin foil will keep her off (although your new furniture will look weird for awhile). But leave her a place where she'll be comfortable.
